I had a butter pecan cake mix on hand and wanted to do something with it.I went on line and happen to come across this recipe.This is what I made for Easter.Didn't bring any home. Everyone loved it.
Butter Pecan Pound Cake
1- box butter pecan cake mix ( Mind was made by Betty Crocker)
1- can Duncan Hines coconut pecan icing
4 large eggs
1 cup water
3/4 cup veg. oil
2 cups flaked coconut
1 cup pecans chopped
Preheat oven 350
Mix eggs,water,and oil together in large bowl. add the cake mix and blend well with mixer.
Add the icing to batter and mix well then the coconut and pecans and mix well.
Pour into a well sprayed bundt pan.
Bake at 350 for 25 minutes then lower temp to 250 and bake for another hour.This was new to me,but after 45 minutes I checked it.Needed a bit longer.Just keep checking.I think I baked mine alittle to long but it still was good.Just use your judgement.Use cake tester to check for doness.Cool in bake 15-20 miuntes then remove and place on rack.
I had cool whip for anyone that wanted it. So Good.Enjoy!
