Broccoli Tots are a fun and healthy play on tater tots made with finely chopped broccoli in place of potatoes.

Baked Broccoli Tots
(recipe source: thetwobiteclub)

Ok, these are totally yummy! My kids are obsessed with broccoli. What?!

I large head of broccoli
2 eggs
1/4 cup diced yellow onion
1/2 teaspoon minced garlic
3/4 cup cheese of choice (I like gruyere or colby-jack)
1/2 cup panko breadcrumbs
3 tablespoons parsley
Salt and pepper to taste

Dash of cayenne (optional)

Preheat the oven to 400°F.

Spray mini muffin pan(s) with cooking spray. Cook the broccoli in boiling water for 4-5 minutes then remove and shock with cold tap water to stop the cooking process. Lay the broccoli out onto paper towels and cover with more paper towels,  Press down firmly on the broccoli to absorb as much moisture as you can.  Another method is to put the broccoli in the center of a dish towel and ring out the water.

Chop broccoli finely and mix throughly with the egg, onions, garlic, cheese, breadcrumbs, and seasonings. Fill each muffin cup in a mini muffin tin to the top, pushing down on the filling with your spoon so it's nice and compacted.

Bake for 18-25 minutes.  The tops should be golden brown. Let them cool a bit so they stay together better.

Yields: 22 to 24 mini tots

These look very yummy!  Thanks for sharing the recipe.

Would you consider this more of an appitizer, or a vegetable side dish?

Hi mtc... You're very welcome. YaY! Can't wait how you like them.

Hi CaliKat... You are so welcome. They are so good! I'd say you go either way appetizer or side. I've even had them as a snack. :-)

I love broccoli, and I've been wanting something different to do with it.  These look great!  Just curious, I would think they could be individually frozen and taken out and reheated -- just two or three as a little snack.  Anyone think that would work?  I'm always looking for something fairly healthy for snacks, instead of too much sweet stuff!

Hiya Kittymomnc.... You are very welcome. I don't see why you couldn't freeze them. Id just make sure to wrap them really well. Hope this helps.

Thank you!  These sound delicious.  I will definitely double the recipe, since I would probablly eat most of them.  Love Broccoli.

There is no fun in doing nothing when you have nothing to do.

Oh, yum! Have you ever made them without the panko breadcrumbs? I'm trying to cut out carbs. I bet I could sub Parmesan cheese!

Lola, I just pulled these out of the oven and they smell fantastic!  I don't have one of those smaller muffin tins so I ended up with six nice size muffins.  What a great recipe, thanks so much for posting!

For those that are asking about substitutions, I think this is one of those recipes that lends itself well to swapping things out or making changes.  For example, I like a lot of cheese so I added more than the recipe stated and also upped the eggs.  I'm not sure about leaving the panko bread crumbs out  because they may be needed as a binder (someone with more experience would be better to speak to that) but perhaps if you did substitute the parmesan it would be fine.

Since I added so many more eggs, I am planning on having the leftovers for breakfast, yum!
