Out of curiosity I bought some leeks because I've never tasted them before. I googled some recipes but I would rather see if any of you great cooks have a tried and true favorite! Thank you!

I decided to go with warm weather recipe from my step-mother Deirdre and am sure someone will chime in with a potato and leek soup for colder weather.
Deirdre’s Leek and Lox Salad
2 leeks
2-3 tomatoes
2 hard cooked eggs
2-4 oz lox
¾ cup plain yogurt
2 Tbs chopped Italian parsley
1 Tbs olive oil
1 Tbs fresh lemon juice
¼ tsp dry mustard
1 tsp sugar
Salt and pepper to taste
Clean the leeks; cut into thin slices; separate into rings. Peel and cube tomatoes. Chop eggs coarsely. Cube lox. Combine all these ingredients. Stir together remaining ingredients, pour over salad, toss and serve.
This was my step-mother’s favorite salad recipe. She was British. What she didn’t state was that she served this on Butter Lettuce on occasion, with her favorite sour dough bread in a basket and unsalted butter. When I make this, I usually add 2 tsp of washed and drained capers.

Ina Garten uses leeks in many of her recipes, if you have any of her cookbooks.
My favorite is her Beef Barley Soup which you make with Ox Tails (but you can use any beef with bones in it, really).

One of our faves is Leeks and Ham in Cheese sauce and it's very simple.
Just trim off the green tops, cut leeks in half and rinse well. Lay in a baking dish with a little water and microwave for 5 minutes til softened. Drain water and let leeks cool a little then wrap each leek half in good quality sliced ham. Lay back in dish.
Make a cheese sauce with sharp cheddar and a little English mustard then pour over leeks. Bake in 400 oven for 20-30 minutes to heat through and brown top.
