Re: Betty Crocker Cookbook ?

I have 13 Betty Crocker cookbooks mostly from 1950s and 1960s. I do have the Good and Easy book from 1954. I looked but was unable to find chicken marengo in any of my Betty Crocker books.

Re: Betty Crocker Cookbook ?

In case you need a recipe for this dish before you find the original, here is one from an old copy of Cook's Country:

3 lbs bone-in, skin-on split chicken breasts, patted dry

1 tbsp extra-virgin olive oil

1 onion, chopped

4 tsp minced garlic

10 oz thinly-sliced mushrooms

1/2 tsp dried thyme

2 tbsp tomato paste

28 oz canned diced tomatoes, pulsed 3-4 times in food processor

3/4 cup chicken broth

1/2 cup brandy

1/4 cup chopped kalamata olives

1/4 tsp red pepper flakes

3 tbsp butter

Season chicken with salt and pepper.  Heat oil in Dutch oven over medium-high heat until just smoking.  Cook chicken skin-side down until deep golden brown.  Flip and brown on other side.  Place on plate.

Cook onion in remaining fat over medium heat until softened.  Stir in garlic.  Stir in mushrooms and thyme.  Cover and cook for 10 minutes, stirring occasionally.  Stir in tomato paste until thickened.

Stir in tomatoes, broth, brandy, olives, and pepper flakes and bring to boil.  Add chicken skin-side up.  Place pot in 450 degree oven until chicken reaches 160 degrees, about 1/2 hour.  Place chicken on platter.  Stir butter into sauce and serve with chicken.

Re: Betty Crocker Cookbook ?

I checked my old Betty Crocker cookbooks and didn't spot it. However I found this Chicken Marengo recipe in an old church cookbook from maybe the '60s or '70s that used to be a family favorite:

Chicken Marengo

2 quartered fryers

6 slices diced bacon

3/4 C flour

2 tsp salt

1/4 tsp pepper

1 C chopped onion

1 small clove garlic, minced

1 4 oz can mushrooms

2 C tomatoes

1/4 C chopped parsley (one would assume they mean fresh)

Few dashes red pepper

Fry bacon almost crisp in large frying pan. Season and flour chicken. Add to drippings, add butter if more drippings are needed. Brown chicken, then sautee onion, garlic, tomatoes, parsely and red pepper, stirring constantly. Pour over chicken in a baking dish. Sprinkle with bacon chips and mushrooms. Bake until tender, about 2 hours at 350F. Garnish with more parsley.
