Beef Parmigiana

1 1/2 pounds round steak....3/4 inch thick

1 egg....beaten

1/3 cup Parmesan cheese....grated

1/3 cup dry bread crumbs

1/3 cup oil

3/4 onion...minced

1 teaspoon salt

1/4 teaspoon pepper

1/2 teaspoon sugar

1/2 teaspoon marjoram

1 (6 ounce) can tomato paste

2 cups hot water

1/2 pound Mozzarella cheese slices

Place meat between pieces of wax paper. Pound meat to about 1/4 inch thick using a meat mallet. Trim of the gristle and fat. Cut into 6 or 8 pieces. Mix together the Parmesan cheese and the bread crumbs. Dip the meat pieces in the beaten egg, then roll in Parmesan and bread crumb mixture. Heat oil in a large skillet. Brown on both sides over medium heat til golden brown. Lay meat pieces in a shallow baking dish. In the same skillet you browned the meat in, saute the onion over low heat til tender. Stir in the saly, pepper, sugar, marjoram and tomato paste. Slowly add the hot water stirring constantly. Boil 5 minutes scraping the brown bits in the pan. Pour ALMOST all the sauce mixture over the meat. Top with the cheese slices then the remaining sauce. Bake at 3508 for about an hour.
