When I was growing up, we always had horseradish in the refrigerator.  My father found the roots somewhere on their property and would dig some up whenever we needed some.  My recollection is that he usually brought some in around the holidays, probably because we all liked it with ham.  My mom would sit out on the back porch all bundled up and peel and grate it, while tears streamed down her face from the potency.  She would mix it with red beet juice to cut some of the potency, if I recall correctly.  I love horseradish on ham or beef.

Forgot about this use. Take a jar of apricot perserves or orange marmalade and mix it with some horseradish. This makes a good dip for chicken fingers or to eat with ham. It sounds like a odd combo but it is good.
