I just stumbled onto an old book I had laying around called "Memories from Brownies Kitchen". It's by Mildred "Brownie" Schrumpf a woman who was a well known food editor for many many years and was something of a Queen in Maine. She lived to be 98 and this book is a complilation of her fave recipes from nearly 40 years of work in the newspaper business. Anyway, I have been craving ribs for two weeks now so I decided to try them this way. I normally steam them in foil over some beer and I don't normally buy country style but I figured what the heck. In the past when I've made country style ones I usually boil them for about 45 min to get some of the fat to come out but this time I'm going to follow her recipe as it's written. I did trim the ribs a lot so I got rid of a large part of the fat. She wrote before the recipe "You'll not believe how delicious this is until you try it!"
BBQ Pork Spareribs
2 1/2 lbs country style ribs (I trimmed them really well and I threw in two pork chops from my freezer I needed to use up)
2 tbl oil
1/2 cup flour
1/4 cup vinegar
1/2 tsp salt
1/2 tsp dry mustard (I didn't have, used 2 tsp fresh spicy brown mustard)
2 tsp celery seed
1 tbl chili sauce
1/2 cup catsup
2 tbl sugar (I used light brown)
2 tbl paprika (I used penzeys smoked paprika)
1/8 tsp pepper
Prepare BBQ sauce by combining the vinegar through the pepper listed above. (I also added 2 crushed garlic cloves and a small dash of worchesteshire sauce)) Marinate the ribs which you cut into serving portions in this for 3 to 4 hours in the fridge. Remove the meat from the marinade and roll it in flour. Brown the meat in the oil. When it's browned, pour the marinade over the meat and cover and simmer over very low heat or in a 325 oven for about 2 to 3 hours till tender and done.
Mine is marinating as I type this, I will be cooking it in about an hour! This is also another recipe of hers that sounded really different and I love anything with horseradish in it. This si next on my to try list, I may try doing pork chops with this one.
Zippy Country Style ribs
3 to 4 lbs country style ribs
1/4 cup yellow mustard (I'd use a grainy one)
1/4 cup soy sauce
2 Tbl horseradish
2 Tbl honey
1/4 tsp ground ginger (I'd used fresh now in a larger amount)
Cover the ribs with unsalted water and boil for about 1 hour. Drain well, brush with sauce and grill (or bake or broil) for an additional 30 to 45 minutes till done)
Also, as an FYI, this is my usual rib recipe which gets raves everytime I make it! Please post your tried and true rib recipe here too! I'm always looking for new ideas and when I do lower fat I use pork chops or chicken instead!
My standby recipe here I use penzeys northwoods fire seasoning instead of the fajita seasoning, you can use what ever you like.
