If you have a favorite summer sandwich, please feel free to post your recipe.

Every summer (and it's starting to seem like summer here) I get enthusiastic about veggie sandwiches. I don't think I ever ate veggie sandwiches until I had been an adult for awhile.

I remember the first one I ate and where I ate it in Spokane, WA, in a little vegetarian place after I'd been shopping all morning. It had some of the same things in it we put in our favorite summer sandwich now.

Veggie Sandwich

Per sandwich:

2 slices Health Nut or similar crunchy brown bread
Brummel and Brown Yogurt spread,or other healthy butter substitute
1 slice of Havarti or Baby Swiss cheese
alfalfa sprouts or slice of lettuce
3 or 4 slices of cucumber
2 slices of tomato
1 thin slice red onion
avocado slices
garlic dill pickles


Spread each slide of bread with Brummel and Brown. Top one
slice with cheese, then lettuce or alfalfa sprouts, cucumber
with a sprinky-dink of salt, tomato slices, red onion, avocado and
dill slices. Top with other buttered slice of bread.
