I found this recipe that doesn't call for a tomato-based sauce in a church-sponsored cookbook. Beans cook for about 3 hours in oven:
1 lb dried navy beans
6 oz salt pork
1 onion
1/2 cup molasses
2 tbsp dark brown sugar
1 tbsp soy sauce
2 tsp dry mustard
1/2 tsp pepper
1 bay leaf
Soak beans overnight in 2 quarts of water and 1 1/2 tbsp salt at room temperature. Drain and rinse well.
Cut salt pork into 3 pieces and cut onion in half. Stir beans, salt pork, onion, molasses, brown sugar, soy sauce, dry mustard, pepper, bay leaf, 1/4 tsp salt, and 4 cups water in big Dutch oven to cover beans by 1/2 inch. Bring to boil over high heat. Cover and bake in 300 degree oven until beans are soft, about 2 hours. (Stir pot after 1 hour and add water to just cover beans if necessary.)
Uncover pot and cook until beans are tender, about 1 hour.
Cover pot and let stand on counter for 5 minutes. Stir beans and remove onion and bay leaf. Let stand for 5 minutes, then stir. Let stand 10 more minutes before serving.

I start with Bushes baked beans. Add 3 or 4 slices cut up bacon (raw), 1/4 cup brown sugar, 1/4 cup diced onion, a squirt or two of ketchup, 1 tbsp of Dijon mustard, and about 1/4 cup of maple syrup. I make with one large can of beans for us and double or triple the recipe for a crowd. I’ve frozen some as one batch is too much for just us.
My my sister said the trick is never to stir the beans once in the oven. Not sure why, but hers are the best! 350 degrees for about 1.5 hours.

@Zhills I currently don’t have one in my pantry but I’m pretty sure they are 28 oz. The tall can. They really turn out delicious.
