BUTTER BEANS WITH BACON & GREEN ONIONS
2 (10-oz) packages frozen butter beans; 6 lean slices bacon; 4 green onions, chopped; 2 cloves garlic, minced; 1/2 cup chopped fresh parsley; 1/2 tsp salt; and 1/2 tsp pepper.
COOK beans according to package directions, and set aside.
COOK bacon in a large skillet over medium-high heat until crisp; remove bacon, reserving drippings in skillet. Crumble bacon, and set aside.
COOK green onions & garlic in drippings until tender, stirring often. Stir in beans, chopped parsley, salt & pepper; cook just until thoroughly heated. Sprinkle with crumbled bacon. YIELD: 8 TO 10 SERVINGS.
