WOW this was good! I made it as is. Well, I used chicken thighs because that's what was thawed out, but other than that, I kept the sauce the same.

I am going to try to make a stew out of the sauce this weekend. I'm going to add chicken broth and wine and cook cubed chicken breasts and potatoes in it.

I made this again.
I added sliced serranos to the mushroom mix.
After the mayo-dijon, I added 1/2 cup of white wine and 1 cup of chicken broth.
I added sliced chicken breasts and diced potatoes.
Simmered for 45 minutes.
Delish!

I tried a new Asian Pasta Salad recipe this week end. Not good enough to share unfortunately.

DiAnne, will you doctor the Asian Pasta Salad to make it worth sharing?
The dish was too watery. I put it over some brown rice and it was really good after the rice soaked up the liquid.
The next time, I will have 3/4 cup of liquid total and see how that works.
If I hadn't added potatoes to it, I would use it to bake rice.

The Asian Pasta Salad was very bland (although a couple of people said they really liked it). I find it difficult to make tasty pasta salad or potato salad. I always think of potatoes and pasta as ways to stretch meals. I may give the dressing a try again with chicken. It may make a good chicken Asian Chicken Salad.

DiAnne, I had to report back on the Bumpy Chicken Soup.
I initially thought I added too much liquid. The potatoes and mushroom absorbed most of the liquid.
I had it for dinner tonight and it was so flavorful!!!!! I had two bowls already.
