A couple of years ago I started making what I called "Bowls" in my ongoing war against boring lunches.  I'd make brown rice to have on hand, put a little into a bowl and top with leftover chicken or salmon or ground turkey and plenty of veg.  Sometimes a little dressing.

 

Come to find out, I wasn't the only one who loved Bowls and now it's been elevated to an art form called "Buddha Bowls." 

 

Does anyone here make them? 

 

I came across a wonderful blog explaining them and including quite a few recipes, mostly vegetables, a few with a little chicken, etc.

I got bored with the brown rice, and then I found minute rice multi grain medley. It consists of brown rice, red rice and quinoa. It is slightly crunchy, and it is ready in 10 min. I also sprinkle it on my green salads to add a little body and texture. It is a tasty change of pace.

I get bored, too.  We make or have Chinese food in the house often, so sometimes I use the white rice.  I tried quinoa a couple of years ago and we all thought it was bland.  Obviously there are ways to fix that, so I just got a new supply.

 

Where did you find that mix @QVCkitty1 ?  It sounds wonderful.

I buy it at my local Tops market, and I believe that Walmart has it. It's made by minute rice, so I'm thinking it must be widely available.

I make brown rice, black beans, and salsa bowl. It does not offer the variety of ingredients as Buddha Bowls, but I like it.

Hi @Iwantcoffee

 

I think the trick is to get some veg on top, too.I know you are getting some in salsa, but maybe add a couple of grape tomatoes, sauteed or fresh red or green bell pepper strips if you like them.
