I've never been to Philly, so will not try to pass this sandwich off as authentic or even close to theirs.  I will say, however, this recipe produces a good sandwich.  

 

Cheese Steak Sandwich

 


For each sandwich:

 

2 Tablespoons butter
1/4 medium onion, sliced
4 large fresh mushrooms, sliced
1/4 green bell pepper, sliced into long strips
½ pound well-marbled beef steak of any type, sliced as thinly as possible 
3 Tablespoons chopped pickled hot peppers
1 teaspoon Hot pepper sauce
2 slices sharp Cheddar cheese
salt and pepper to taste
1/3 French baguette, cut in half lengthwise 


Melt 1 Tablespoon of butter in a large skillet over medium heat. Add the onion; cook and stir until tender. Push onion to the side of the pan, and add the mushrooms. Cook and stir until softened, then add the bell pepper and cook just until tender, about 3 minutes. Remove from the pan with a slotted spoon, and set aside.

 

Add the remaining butter to the skillet and let it heat up a little bit. Place the steak in the skillet along with the pickled peppers.  Season with salt and pepper. The steak cooks quickly, in just a couple of minutes. Once the steak is mostly browned, return the onion and pepper to the pan. Cook until heated through.

 

Turn off the heat, and place the slices of cheese over the top of the pile so they can melt. Scoop the whole pile into the awaiting bread, making sure to pour some of the juices onto the sandwich.

 

Mrs. G's notes: When shopping for steak for this sandwich, good marbling is more important than the cut of meat.  Flatiron steak worked well. I sliced it while frozen, and was able to get shavings and very thin slices. 

 

For safety's sake, freeze the steak before attempting to cut it into very thin slices. Then, with your sharpest knife, slice the frozen steak as thinly as you can. This is the hardest part of the preparation.

 

We Gs prefer to use steamed hoagy buns instead of the French baguette.

Strive for respect instead of attention. It lasts longer.

I purchase London Broil from the deli to use as the steak, so convenient.

I get them to slice it thin and it's wonderful, I warm it in au jus prior to making the sandwich.   I always get compliments.

I went through high school and college living in the Philadelphia area.  I left after graduation except to go back to visit.  To this day, I've never eaten a Philly Cheesesteak Sandwich.  I've always hated greasy food and they looked greasy.

@jlkz  Are you from the area too?  Marple-Newtown HS, Drexel University., then graduated from Kutztown University.

As someone who's lived in Philly all my life, I had my fair share of "authentic" cheesesteaks and while your recipe may be slightly different, it sounds absolutely delicious @IamMrsG.  

 

Hey @Kachina624, I'm curious too about the schools you attended!

Very familiar with Havertown / Upper Darby area:  when first married we lived in Bryn Mawr.  My high school in Conshohocken no longer exists;  my niece is a dean at Drexel and ran the executive MBA program with the international trips.  Just celebrated the big 50 th reunion  at Chestnut Hill.

 

my cousin's son graduated from Kutztown.  He and his mother just got their Masters degree from Immaculata same graduation group !

@jlkz  I find Drexel to be unrecognizable when I look at their website.  When I was there, the were huge in engineering and had one of the best home economics colleges in the US, as well as business administration and library science.

 

Now it seems to be all about their medical school without much mention of the other specialities.  I don't even know if they still have home economics.   We used to have U of PA. Med students in our anatomy classes. 

 

That cool about your cousin and son being in the same class... I believe my niece got her MSW from Immaculata.

 

Its a small world.
