I love this version of French Toast but one sandwich may be too much. I always cut in half & serve.

BANANA FRENCH TOAST

4 eggs; 1/3 cup milk; 1 1/2 tsps cinnamon; 1 Tbsp butter; 4 slices multi-grain bread; 2 ripe bananas, peeled & sliced lengthwise; 1/2 cup maple syrup; and powdered sugar, for serving.

Beat together eggs, milk & cinnamon in a shallow bowl. Melt butter in a large skillet over medium heat. Dip 2 pieces of bread in the egg mixture, coating each side. Place the 2 dipped slices in the skillet. Place bananas on top of the bread. Dip the remaining 2 slices of bread in the egg mixture & place on top of the slices in the skillet to make two "sandwiches". Cook on both sides until browned & cooked thoroughly.

Put French Toast on warmed plates. Remove pan from heat & pour syrup in pan for 15 seconds to warm it. Pour warmed syrup over sandwiches, dust with powdered sugar & serve. Enjoy!
