@Icegoddess When we save guac, we level it out in the container, wipe around the edge with a wet paper towel, spray with olive oil, then cover with enough saran wrap that it goes down to the guac and touches it, comes up the sides of the container, and blocks off all air. Then I put on the top.
When I open it the next day, I scrape a thin layer of top off. Works great. The water should be great for a half.

What I do is to take the half with the pit and vacuum seal it. Keep it in one of the produce drawers in the refrigerator It will stay good for a little while.

@ECBG I do something similar, pressing plastic wrap on the top of it but I have never sprayed any oil on it.
