Arugula-Stuffed Chicken Breasts

This is another recipe from the cheese department at my local store, the picture of this looks wonderful!

Arugula-Stuffed Chicken Breasts

2 T. olive oil

10 oz. fresh arugula

3 garlic cloves, minced

4 boneless, skinless chicken breasts, pounded to 1/2" thickness

3/4 c. shredded Parmesan cheese (or another hard Italian cheese)

Preheat oven to 400.

In a large skillet heat oil over medium-high heat. Add arugula and garlic, saute just until wilted. Remove skillet from heat.

Place chicken on a work surface. Evenly place the arugula mix in the certer of each chicken breast. Sprinkle each with the cheese.

Roll up chicken to enclose the ingredients, secure with a wooden toothpick through the middle. Season the chicken with salt and pepper, and place on a nonstick baking sheet.

Bake, uncovered, 20-25 minutes or until internal temp. is 165.

You could certainly use other greens, and I may even try a thin prosciutto slice under the arugula mix.
