I made this for the first time last night for dinner.  I really liked it ( I also really like artichokes).  It's from All Recipes.com and there's a video to go along with it.  

 

4 boneless, skinless chicken breast halves

3/4 cup mayo

3/4 cup grated parmesean

1 (15 oz)  artichoke hearts (chopped)

1 pinch garlic pepper

 

Mix together the mayo, parmesean, artichoke heart and garlic pepper.  After spraying baking dish, place chicken inside.  Top with mixture.  Bake at 375 for 30 minutes.

 

Note:  I had 3 chicken breasts and pounded them out to be thinner.  I turned heat up to 400 during end of cooking to get that nice browned topping.  I also cooked mine a little longer...maybe 10 minutes or so.

It was so easy to make.  Delicious!

This sounds really delish! Copied and going to make it this weekend. Might throw some spinach in the mixture too. Been looking for a different recipe for chicken and this is right up my alley! Thanks!!

It's a very flavorful dish.  I forgot to mention that I served just plain orzo with it.

This is a good recipe.  I use marinated mushrooms that have had the water sqeezed out of them.  I also replace 1/4 cup of the mayonnaise with sour cream for extra richness.

I make an Artichoke Chicken dish but it is marinated artichokes and fresh mushrooms, butter and EVOO.

 

It's a good combination; artichoke and chicken!

I used plain.  The video with recipe on All Recipes said marinated could be used for more flavor.

Artichoke Chicken

Cut up chicken (3 or 4 pounds)

1 12 oz jar marinated artichokes drained

Paprika

Salt and pepper

Fresh mushrooms 4 or 6 oz package, sliced

Chicken broth (about a cup)

Dry white wine to deglaze the pan (about 1/3 cup)

1/4 tsp rosemary

Butter and olive oil and 2 Tbsp flour

Use the paprika, salt/pepper to coat the chicken and brown in the olive oil/butter combination.

After it's browned put it in a casserole, single layer, with the marinated artichokes in between.

Saute the mushrooms in the pan you used to brown the chicken

Then sprinkle the flour over the mushrooms and stir, add the chicken broth/wine, and rosemary stirring until smooth.

Pour this over the chicken, cover and bake for 35-40 minutes @ 375 degrees.  Very tasty!

 

I never have white wine, so I just use broth.
