Apricot or Peach Chicken

sauce~

2/3 cup peach or apricot preserves
3 tablespoons soy sauce
1 cup chicken broth
2 tablespoons corn starch
1/2 teaspoon dried minced garlic- or use fresh
1/2 teaspoon dry mustard powder
1/4 teaspoon cayenne pepper
black pepper
1 cup pineapple chunks and juice

1/2-1 cup chopped onion
1/2- 1 cup chopped green pepper


1 pound boneless chicken breast, cut into strips or bite size pieces

garlic powder, paprika, black pepper and salt to taste

1/2 to 1 cup cashews- coarsely chopped

cooked rice

Heat sauce ingredients in small sauce pan. Saute onion and green pepper in oil in skillet for about 15 minutes then add onion and green pepper to sauce. In same skillet, brown the chicken, seasoned with some garlic powder, paprika, black pepper and salt to taste. When no longer pink, add sauce to skillet. Add cashews. Serve over rice.
