The Banana Butterscotch Bundt Cake from Lynneuk, is absolutely wonderful. I made it with Spice Cake mix and Instant Vanilla pudding and added streusel to the bottom (ends up as the top) and in the middle. So good it only last 2 days. The flavor combination possibilities are endless. Highly recommend it and give it ![]()

Thanks to everyone for your responses! I've gotten a lot of great ideas and what looks to be some delicious recipes, so I may wind up buying more bananas instead of throwing them away. Besides, I need the potassium, so if I go a little overboard with the sweets, I can always tell myself it's healthy! And some of these definitely are. Thanks so much.![]()

This might sound a little silly but it's delicious. Mash a banana with a fork add just a little bit of milk and sprinkle with sugar. Mix together so that it's like a thick pudding. eat and enjoy. When my children were babies they loved eating them this way. It was the next step after the Jr. bananas in a jar.

Freeze them and then do this:

Peanut Butter and Nanner Ice Cream

Yield:2 to 4 servings
Level:Easy
Ingredients
2 to 3 ripe bananas
1 tablespoon creamy peanut butter
1 to 2 tablespoons honey (test banana sweetness)
Directions
Cut the bananas into 1-inch pieces and freeze. Put the frozen bananas in a food processor and puree, scraping down sides periodically, until smooth. Add the peanut butter and honey and puree. Serve immediately or refreeze until ready to enjoy.
I have made this before using Nutella instead of peanut butter, for a chocolate fix.

I have made Antonella's banana cake many times and it always turns out moist and delicious. I've never made a batch of banana bread that I've liked as well as I like her cake. One difference for me, though. I don't use the wooden spoon she recommends, I use my trusty Kitchen Aid.
