Cauliflower Salad

 

Ingredients

 

1 head cauliflower, chopped into small florets

2 stalks celery, diced

1/4 red onion, finely diced

1 Tbs fresh parsley, finely chopped

2 eggs, hard boiled, shelled, and diced

2 Tbs mayonnaise

1 Tbs dijon mustard

 ½ tsp sea salt (optional)

 

Instructions

 

Add 1" of water to the bottom of a medium pot (with lid). Insert steamer basket and fill with chopped cauliflower. Cover.

 

Steam cauliflower on the stove top over medium-high heat until slightly tender, about 10 minutes after water begins to simmer (overcooking will develop a stronger "cauliflower" smell, and a mushy texture).

 

Drain cauliflower and rinse with cold water to cool immediately. Place in a large bowl

 

Add celery, onion, parsley, and eggs

 

Stir in mayonnaise, dijon mustard, and sea salt (if desired).

 

Serve immediately or store in refrigerator.

I just made this last weekend.  It was very good, easy and well received by guests.

Wegman's has cleaned, chopped Cauliflower in a bag already.  Sometimes I purchase those to save time and mess of a big head.

 

Roasted Cauliflower and Aged White Cheddar Gratin        serves 4

  • 1 large head cauliflower, cut into florets
  • 2 tablespoons oil
  • salt and pepper to taste
  • 3 tablespoons butter
  • 3 tablespoons flour (rice flour for gluten-free)
  • 1 1/2 cups milk
  • 1/4 teaspoon nutmeg, optional
  • salt and pepper to taste
  • 1 cup aged white cheddar cheese, shredded
  • 1/2 cup panko bread crumbs (gluten free for gluten free)
  1. Toss the cauliflower florets in the oil along with the salt and pepper and arrange them in a single layer on a large baking sheet.
  2. Roast the cauliflower in a preheated 400F/200C oven until lightly golden brown, about 20-30 minutes.
  3. Melt the butter in a saucepan over medium heat, mix in the flour and let cook until it just starts to brown a little.
  4. Mix in the milk, nutmeg, salt and pepper and cheese and heat until the cheese melts and the sauce thickens.
  5. Mix cauliflower into the bechamel sauce, pour into a baking dish and top with the bread crumbs.
  6. Bake in a preheated 350F/180C oven until it is bubbling on the sides and golden brown on top, about 15-20 minutes.

Tip: Make sure to brown the butter and then cook the flour in the butter until it starts to brown to get more flavour in the bechamel sauce and ensure that there is no flour-y taste.

Alternatives
Bacon: Smoky bacon or even pancetta would be a great addition and for the daring, replacing the butter in the bechamel sauce with bacon grease would add even more smoky, bacon-y goodness!

Mushrooms: Sautéed mushrooms or dried porcini mushrooms would also be amazing in this gratin!

Bacon and Mushroom: Combine all three to make something even more decadently delicious!

I've tried the pizza crust recipe. I.m Not a great cook, didn't totally squeeze out all the water and it was tasty! My only complaint....it was mushy in the middle.  It was very crisp and delicious on the edge so next time I'm going to make 2 rectangles instead of a circle.

Depending on what you do with it, I've found that frozen cauliflower florets are just as good as fresh and a lot less labor intensive. I think if you are ricing your cauliflower, fresh is better. I used to only buy fresh and cut it myself and now I generally buy frozen.

 

My favorite recipe is a cauliflower with curry powder, but I can't find it anywhere online to copy here. I'll try to remember to add it when I get home to my books. When I use frozen cauliflower with that, the most labor I do is chopping an onion.

@Adamlambert  Thank you for your review of the pizza crust.  I have been hoping someone here would share their opinion/experience.  Was it as labor intensive, time consuming, as I've read?

It was easy really. Didn't take long.  Like I said I'm not a good cook, so I'm certain you can do it!!!  But.... Lol.... It does not taste exactly like pizza crust!!  I was expecting it to cause all the articles said it did.   It was good, knowning that it was healthy Smiley Happy.  I'm making it again.  I've also made fritters and they were good too.   I don't like veggies so I was impressed.    Have fun!
