Thank you! It's very good and really has extra flavor so it's not overwhelming with bourbon

NUTTY Cranberry Apple Salad

 

8 cups torn leaf lettuce

2 unpeeled apples, cut into bite-size pieces*

1/2 cup crumbled blue cheese**

1/3 cup dried cranberries

1/4 cup chopped WALNUTS

 

Toss the above in salad bowl and set aside.

 

Poppyseed Dressing

 

1/2 cup canola oil

1/4 cup sugar

1/4 cup red wine vinegar

1/2 teaspoon poppyseed

 

In a jar with tight-fitting lid, combine dressing ingredients; shake well.  Pour over salad just before serving; toss to coat.

 

* Pears are a good alternative to apples when in season.

 

** Ok to use different cheese.  I prefer feta.

PUMPKIN SPICE EARTHQUAKE CAKE with cream cheese

 

A cream cheese swirl layer to add to the delicious pumpkin then topped off with a handful of chocolate chips.  (from cookiedoughandovenmitt.com

 

Ingredients Cake Batter:

  • 1 box Betty Crocker Spice Cake Mix
  • 3 large eggs
  • 1 cup pumpkin puree (canned) NOT pumpkin pie mix
  • ¾ cup water
  • ½ cup vegetable oil
  • 1/3 cup granulated sugar
  • 2 teaspoons pumpkin pie spice

Cream Cheese Filling:

  • 8 ounces cream cheese (room temperature)
  • 1/2 cup unsalted butter (melted)
  • 3 cups powdered sugar
  • 1/2 cup chocolate chips

Instructions

  1. Preheat oven to 350 degrees. Spray a 9x13 baking pan with non-stick spray.
  2. In a large bowl, mix together the cake mix, pumpkin, eggs, water, oil, sugar and pumpkin pie spice. Pour batter into the prepared pan.
  3. In another bowl, melt the butter and mix together with the room temperature cream cheese. Stir in the powdered sugar and mix until well combined.
  4. Place spoonfuls of the cream cheese mixture all over the top of the cake mixture. Using a knife, gently swirl through the cream cheese. Sprinkle chocolate chips on top and bake for 40-50 minutes or until center is set.
  5. Allow the cake to almost completely cool before cutting. If you cut before it cools, the cake will be very soft and won't cut cleanly.
  6. Store in an airtight container in the refrigerator.

**NOTE:  I had trouble finding Spice Cake so used yellow and spiced it up myself.

@RespectLife,

 

Dang, I got everything together to make this and forgot the jalapenos so i will have to go tomorrow to pick up the peppers. This looks really good. I'm looking forward to it.
