Years ago, I would only buy Hellmans mayo. Not so anymore! They changed their recipe somewhere along the way, and I didn't find it appealing. Not only was the taste off, but when you scooped up a knife full it had a gelatinous texture. So, I switched to Dukes mayo and became a big fan ever since. Duke's contains a higher ratio of egg yolks than most other commercial mayos, which makes it rich, creamy, and less likely to separate when heated. There's a wisp of tang from vinegar and a touch of paprika. Its texture is thicker and almost custard-like instead of simply slick or gelatinous, like Hellmans and some other brands.
Another difference is that Hellmans mayo contains sugar, whereas Dukes does not.
