Easy Baked Shrimp Scampi

 

2 Tablespoons WHITE WINE

2 Tablespoons lemon juice

1/2 cup Panko

1/4 cup butter, melted

1-2 lbs. medium shrimp, uncooked, peeled & deveined

2 Tablespoons olive oil

3 cloves garlic, minced

1/2 teaspoon red pepper flakes

salt and pepper

2 Tablespoons fresh parsley for garnish, if desired

 

Preheat oven to 425.  Put WHITE WINE and lemon juice in 9x13" baking dish, set aside.

 

Mix together shrimp, olive oil, garlic and red pepper flakes.  Season with salt and pepper.  Add this in single layer in the baking dish.  Mix togethe Panko and butter and sprinkle over the top.  Place in oven and bake until bubbly and golden about 10-12 minutes.  If desired, garnish with parsley before serving over pasta.

 

* I may have gotten this recipe here...very good.  I doubled the amount of WINE and lemon juice; did not use red pepper flakes or parsley.  Served over linguine pasta but any pasta or rice would be good.

I just saw this recipe in a old Church cookbook

YELLOW squash relish

8 cups squash , cut into bite size pieces
3 cups chopped onions
4 bell peppers chopped ( optional)
3 tbsp canning salt
Place vegetables in bowl sprinkle with salt
Let set 1 hour
Drain place in sterilized jars
Heat
3 cup sugar
2 cups white vinegar
1 tsp celery seed
1 tsp mustard seed
Heat and pour hot mixture over vegetables in jars , seal
It doesn’t say anything about processing a few minutes in a water bath so I don’t know if you should or not ?

Zucchini Lasagne for 1 or 2

 

Ingredients

  • 1 small zucchini
  • 1/2 tablespoon olive oil
  • 1/2 cup chopped onions
  • 1 clove garlic , minced
  • 8 ounces ground beef, or you can use turkey
  • 1/2 teaspoon Italian seasoning
  • 1/4 teaspoon salt (plus the salt for the zucchini)
  • 1/8 teaspoon black pepper
  • 3/4 cup tomato sauce, divided
  • 3/4 cup Ricotta cheese
  • 3 tablespoons Parmesan cheese, divided
  • 3/4 cup shredded Mozzarella cheese, divided

 

Instructions

  • Heat oven to 350 degrees F.
  • Slice zucchini lengthwise into very thin slices. Lay the zucchini strips on a long cutting board or tray and lightly sprinkle salt over them. Let the zucchini strips sit undisturbed for 10 minutes. After this time, dry the zucchini slices with a paper towel.
  • To prepare the meat sauce, heat the olive oil in a medium-sized skillet over a medium heat. Add in the onions and cook for 2 minutes, stirring occasionally. 
  • Add in the minced garlic and cook, stirring occasionally for a minute more.
  • Add the ground beef to the pan and sprinkle the Italian seasoning, salt, and pepper over the meat. Cook and stir the ground beef until meat is no longer pink.
  • Stir in 1/2 cup of tomato sauce, reduce the heat to low and simmer the sauce for 3 minutes. 
  • Meanwhile, stir the ricotta and 2 tablespoons of the Parmesan cheese together in a small bowl. Set the bowl aside.
  • To assemble the zucchini lasagna, spread 3 tablespoons of the sauce into the bottom of a lightly greased small baking dish or loaf pan. Line the bottom of the baking dish with slices of the zucchini. 

 

Top the zucchini with 1/2 of the meat sauce, followed by 1/2 of the Ricotta mixture, and 1/4 of the shredded Mozzarella.

 

  • Repeat by adding a second layer of zucchini slices, the meat sauce, Ricotta mixture, and 1/4 cup of the Mozzarella.
  • Top with a final layer of zucchini noodles, the remaining 1/4 cup of tomato sauce, and the remaining cheeses. If you don't have room for the zucchini, top with only the remaining sauce and cheeses.
  • Place in the oven and bake for 30 minutes or until cheese on top has melted.

This Zucchini Lasagna Recipe makes one large serving or can be an ideal size meal for two people

if served with a side salad.

@Shihtzursqmom   The vinegar in the pickling liquid should keep the relish in the fridge for quite a while.

 

However, this recipe make a lot of relish to keep in the fridge!

APPLE Brownies

 

2/3 cup butter, softened

2 cups brown sugar

2 eggs

2 teaspoons vanilla

2 cups flour

2 teaspoons baking powder

1/4 teaspoon salt

1 1/2 cups chopped APPLES

1/2 cup chopped nuts, optional

Confectioner's sugar on top, optional

 

Preheat oven to 350.  Grease a 9x13" baking pan.  Cream butter and brown sugar; add eggs and vanilla....mix.  Gradually add the flour, baking powder and salt as you continue to mix.  Stir in APPLES and nuts if using.  Bake 30 minutes or until brownies are light brown on top.  Cool and sprinkle with Confectioner's sugar before cutting.

Just seeing that box brings back the best memories!  My mom's cooking skills were limited and she never made her own soup. We grew up on Campbell's and Lipton soups.  Lipton was my clear favorite.

I saw this recipe in a old Church cookbook I thought it sounded different and easy

CHERRY Fudge Cake

1 box fudge cake mix
1 can CHERRY pie filling
3 eggs
1 tsp almond extract
Mix all ingredients by hand , pour into 13x 9 inch pan sprayed with cooking spray
Bake 350 35/40 mins until test done
Cool

Frosting
1 cup sugar
1/3 cup milk
5 tbsp butter
1 bag chocolate chips
Bring to boil the sugar , milk , and butter
Bring to a boil boil for 1 min rapid boil
add chocolate chips , stir well
Pour over cake

This recipe has been taste tested by all the dogs I know and every one of them has given them two paws up!

DOG BISCUITS

 

2/3 cups pumpkin puree

1/4 cup peanut butter

2 eggs

3 cups whole wheat flour (give or take)

 

Mix pumpkin, peanut butter and eggs.

Gradually mix in the flour until dough is no longer very sticky.  It will be dry and thick, I recommend a stand mixer.

 

Knead into a ball.  Roll about 1/4" thick. Cut into shapes.

You can buy the biscuit cutters on A-zon, but actually your dog won't care what shapes they are, lol.

 

Bake at 350° for 20-25 minutes.
