Made these the other day and they were delicious!
SHEET PAN STEAK FAJITAS
Line a very large sheet pan with heavy foil.. (17 inch sheet pan)
Prep all your meat and veggies ahead of time. With each veggie you prep, put in a bowl and drizzle with a little olive oil and shake on some of the fajita seasoning and mix thoroughly, do this with each veggie you cut thin. Then do the same with the meat..drizzle with a little olive oil and shake some of the fajita seasoning on it. Use the package up on all the veggies and meat. So everything will be ready to dump into the sheet pan.
2 Bell peppers; one green, one red sliced very thin into strips (*I subbed in a small pkg of sliced mushrooms b/c I only had one pepper.) It will give off more liquid using mushrooms.
1 BIG onion or 2 large onions, sliced very thin
2 fresh limes, cut into quarters
1 jalapeno pepper, seeded and sliced into thin 1 inch matchsticks
1 package of Fajita seasoning (any brand)
2 Tablespoon or more, if necessary of olive oil
1-1 ½ pounds of Flank steak, (I used 1 ½ pound piece) unrolled, cut in half lengthwise and then cut each piece into ¼ inch strips across the grain. (I put my steak in the freezer for about 10-15 minutes prior to cutting so it is easier to slice thin.)
TOPPINGS
Flour tortillas the 4 or 5 inch size (heated in the microwave and stored in foil to keep warm
Sour cream
Salsa
Guacamole
Shredded Mexican Cheese
Chopped fresh Cilantro
Now take the very large sheet pan and line it with heavy duty foil. Preheat your oven to 400 degrees, but put the foil lined sheet pan in the oven alone so that it also preheats before you put the veggies and steak in.
When the oven is preheated then take the sheet pan out and put all the pre-prepped veggies and steak into the pan. Mix it all around, spreading it out to distribute evenly. Place the quartered lime wedges here and there on the sheet pan with the meat and veggies.
Bake in the oven for 15-17 minutes. (test a piece of meat..it should be tender and delicious, you don’t want to over cook it)
Pile it onto flour tortillas with all the fixings. (Can substitute chicken or shrimp for the beef)

@PilatesLover I used flank steak and it was very tender. I suppose if you use other cuts of beef it could be tougher, but the flank steak was tender and delicious. Like I had indicated in the recipe: I used 1 ½ pound piece of flank steak) unrolled, cut in half lengthwise and then cut each piece into ¼ inch strips across the grain. p.s. make sure to cut your veggies thin also so the meat and veggies cook at the same rate.

Sheet pan meals are so great, made a mini version last night with broccolini & mini peppers with parm sprinkled with Lawrey's garlic salt & cracked pepper. Looking forward to making your fajitas!

@We rescue cats How did you like it? The recipe actually calls for just onions, peppers for the veggies. I only had one pepper so subbed in mushrooms that I had in the fridge, which were good too, but the mushrooms did give off more liquid than if used 2 peppers, but still good.

@ciao_bella They were great, and what made them even better was how easy they are to make! I hate the mess of frying in a pan plus needind to watch over them so closely. This is a definite keeper! Thanks again!
