Greetings fellow Recipe Game friends and welcome to the month of April (and that's no foolin') . . . sorry I couldn't resist Smiley Wink

 

I was fully prepared for it to be April (time to thaw out!) but I was not prepared for Easter to be sneaking around the first corner of the month!   So please let our recipe friends gather and share their delicious and time tested recipes.  Many thanks to our friend @RespectLife for her Keto Jalapeno Popper Chicken Casserole, yum!:

 

Keto Jalapeño Popper Chicken Casserole

Ingredients
  • 4 cups cooked chicken shredded
  • 4 cups cauliflower riced
  • 12 ounces uncured bacon cooked, crumbled
  • 8 ounces of cream cheese at room temperature
  • 3 large (or 4 small) Jalapeno peppers chopped
  • 2 cups shredded cheddar cheese
  • ½ cup heavy cream
  • ½ cup CHICKEN STOCK *I LOVE WEG ORGANIC IN THE CARTON 
  •  1 tablespoon bacon grease
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • Optional: sour cream

Instructions

  • Preheat oven to 375F. Fry the bacon in a skillet until crisp, then chop the bacon into small pieces. Reserve 1 tablespoon of the bacon grease and some of the bacon (for the topping).
  • Add cream cheese to a large mixing bowl, whip using a Hand Mixer. Add in heavy cream, chicken stock, bacon grease, garlic and onion powder and continue mixing until combined.
  • In the same bowl, add in chicken, chopped bacon, jalapeño peppers, cauliflower rice & about half of shred cheddar cheese.
  • Mix thoroughly til everything is well combined, pour into a 9″ x 13″ baking dish that’s been sprayed with nonstick spray.
  • Add the remaining cheddar over the top and bake 40-45 minutes or until the cheese is golden and bubbly.
  • Optional: Top with the reserved bacon, slices of jalapeño peppers, sour cream & fresh chopped parsley, then serve. Store leftovers in fridge,  airtight container for a few days or freeze.

Cucumber🥒 Tomato🍅 Salad

 

For the salad:  

 

3 cups sliced cucumbers (1 1/2 to 2 English cucumbers,

   peeled or unpeeled)

3 Roma tomatoes, chopped

1/2 cup thinly sliced red onion

1/4 cup julienned or chopped fresh BASIL

2 teaspoons chopped fresh dill

 

For the dressing:

 

1/4 cup extra virgin olive oil

3/4 cup apple cider vinegar

1 tablespoon red wine vinegar

1 teaspoon granulated sugar

1/4 teaspoon kosher salt or to taste

1/4 teaspoon black pepper or to taste

 

Place cucumbers, tomatoes, red onion, BASIL and dill 

in a large bowl.  Toss to combine.  

Whisk dressing ingredients together well.  Drizzle 

viniagrette dressing over salad and toss to coat as evenly as possible.  Serves 4.

 

* Salad is best served within a few hours of making it.  But, it can be stored in an airtight container in refrigerator for up to 2 days.

Easy Skillet Sausage & Cabbage for 2 

  • Prep time: 10 mins              Cook time: 20-25 mins 

Ingredients:

  • 1/2 lb (8 oz) Smoked sausage or Kielbasa, sliced
  • 2-3 Medium potatoes (Yukon gold or red), diced small
  • 1/2 Small head of green cabbage, chopped
  • 1/2 Yellow onion, diced (optional)
  • 1 tbsp Butter or olive oil
  • 1/4 cup Chicken broth (optional, for steaming)
  • 1 tsp Garlic powder
  • Salt and black pepper to taste 

Instructions:
 

  1. Brown Sausage: In a large skillet, heat butter/oil over medium-high heat. Add sliced sausage and cook until browned (about 5 mins). Remove sausage and set aside.
  2. Cook Potatoes: Add potatoes (and onions, if using) to the same skillet. Cover and cook for 8-10 minutes, stirring occasionally, until they start to soften and brown.
  3. Steam Cabbage: Add the chopped cabbage and garlic powder. Add chicken broth if the pan is dry. Cover and cook for 5-7 minutes until cabbage is wilted and potatoes are fork-tender.
  4. Combine & Serve: Return the sausage to the skillet, stirring to combine everything, and cook for 2 more minutes until heated through. Season with salt and pepper.

👀.....👀.....👀......looking for new posters and recipes here......in meantime, I will post this easy one dish recipe...probably a repeat ......use any amount of ingredients depending on how many you serve.

 

Chicken and Vegetables

 

2-4 boneless chicken breasts

2-4 red potatoes, cubed

fresh GREEN BEANS ....your choice on amount

olive oil

Dried Italian Dressing Mix

 

Preheat oven to 350 degrees.  Grease or spray a 9x13" baking dish.  Place chicken in center of dish.  Add potatoes around sides.  Cut and trim GREEN BEANS and add around sides of dish as well.  Drizzle olive oil over all.  Sprinkle approximately half a package of dried Italian Dressing Mix over it. (You can also just use Italian Seasoning).  Cover baking dish and bake 60 minutes.

No Bake Lemon Pie

 

14 oz Sweetened Condensed Milk

1/2 cup fresh lemon juice

1 Tbsp lemon zest (for top of pie)

8 oz carton Cool Whip

9" graham cracker crust

 

Combine milk and lemon juice. Let stand for 5 minutes. Fold in Cool Whip and spoon into crust.

'Sprinkle' lemon zest on top of pie

Refrigerate.

I use this as a basting sauce for grilled chicken or toss with steamed vegetables.

 

Honey-butter sauce

 

1 cup butter

1 cup white vinegar

3/4 cup Honey

4 garlic cloves crushed

1 tablespoon salt

1 1/2 teaspoons dry mustard

3/4 teaspoon dried thyme

1/2 teaspoon pepper

 

Melt butter in medium saucepan, stir in vinegar and remaining ingredients. Serve immediately or store in refrigerator up to one week.  Reheat before serving. Yield:  2 1/2 cups.

 

I've also brushed it on dinner rolls, or Italian bread.  I usually cut the salt, to me, a tablespoon is too much.  I usually use a teaspoon or less.  I always wondered if it was a typo.

Chicken with Creamy Walnut Sauce

 

Ingredients:

  • 2 chicken breasts
  • ½ cup ground walnuts
  • 1 cup chicken broth
  • 2 tbsp cream (optional)
  • 1 clove garlic
  • 1 tsp lemon juice
  • Salt & pepper

Instructions:

  1. Cook chicken in a skillet until done; set aside.
  2. In same pan, add garlic, broth, and walnuts; simmer.
  3. Stir in cream and lemon juice.
  4. Return chicken to pan and coat with sauce.

I don't know about you, but I'd serve with rice or pasta.

Yellow Squash is my favorite vegetable!  I like it any way it can be cooked and the small ones even raw in salad!  

 

                      Old School Squash and Onions - Southern Bite

 

Skillet Squash

 

Ingredients:

 

  • 2-4 yellow squash
  • 1 medium red onion
  • ¼ cup of Extra Virgin Olive Oil
  • ½ teaspoon of garlic powder
  • Salt and pepper to taste

 

Instructions:

 

  1. Slice squash into ¼ inch pieces
  2. Slice red onion into narrow pieces
  3. In a large bowl combine ingredients until coated with EVOO evenly
  4. Pour into warm skillet and cook until squash and onion are soft and semi-transparen.
