Greetings Recipe Game friends and welcome to May! 

 

And I don't know about you as even though we still have frost on the rooftops, I am ready for some summer eating!  I am so looking forward to some fresh, locally grown produce and the smell of my neighbor's grills as they start cooking out or as our good friend @Zhills  was kind enough to post (I have to try that Lawrey's seasoning salt in the drressing, thank you!), a yummy and always welcome pasta salad:

 

Pasta Salad with tuna or without!

  • 16 oz elbow noodles cooked according to pkg directions

  • 12 oz tuna in water drained OR other meat cut into small pieces.

  • 4 hard-boiled eggs chopped
  • 1 cup frozen peas defrosted
  • 1/2 cup red onion diced fine

  • 1 1/2 cup mayo
  • 1/4 cup milk
  • 2 tsp seasoning salt (Lawrey's)
  • 3 - 4 Tbsp sugar
  • Salt & pepper to taste

Instructions

Cook your pasta in large pot with salted water until al dente.  Drain well.

  1. In large bowl add your MEAT, eggs, onion and peas.
  2. Add in your drained pasta and stir to combine, set aside.

  3. In a bowl whisk together mayo, milk, seasoning salt, sugar, salt & pepper until combined.

  4. Pour over your pasta, scraping the bowl to make sure you get all the dressing mixture then stir to coat everything evenly.

  5. Cover with plastic wrap and refrigerate for 30 minutes to at least an hour to chill and let pasta soak up some of the dressing.

This makes a very large amount.  I cut it in half and it is still a lot!

This would make a great Pasta Salad without meat!  Very Tasty!  Different!

Cook chicken in hot skillet, set aside. Scramble eggs in same pan, set aside. Add sesame oil, garlic and cold rice — press flat and let it sit untouched 2 minutes to get crispy. Toss in veggies, chicken and eggs. Add soy sauce, stir everything together. Top with green onions.

Better than takeout and done in 15 minutes

Potatoes, thinly sliced (6 cups)
- Cooked ham, diced (2 cups)
- Onion, diced (1)
- Shredded cheddar (2 cups)
- Cream of mushroom soup (1 can)
- Sour cream (¼ cup)
- Chicken broth (½ cup)
- Butter (2 tbsp) + garlic powder (1 tsp)
- Salt & pepper to taste
Layer potatoes, ham and onion in the crockpot, mix cream of mushroom, sour cream, broth, butter and garlic powder and pour over the top, cover with cheddar and cook on LOW 6 to 7 hours.
