Sometimes referred to as Rio Grande Pork Roast. Many versions out there. The one with crushed Fritos was a favorite of my sons. I think they thought was fun to have Fritos for dinner.

 

INGREDIENTS
1 (4-5 lb)  boneless pork loin roast
1/2 c KETCHUP
1 c Crushed corn chips
1 tb Vinegar
1/2 ts Chili powder
1 ts Salt
1 ts Chili powder
1/2 c Apple jelly
1 ts Garlic powder 

 

Instructions
Preheat oven to 325.

Mix together ketchup, vinegar, apply jelly with spices and apply to roast so it covers all of pork roast. Coat roast in crushed corn chips over entire roast.

Place roast on rack and bake until roast reaches temp of 150f degrees. Approximately 2 hours.

Lol...so I am on pain killers and I apparently forgot the alphabet. I need my grandbabies to come over and sing them to me. Good gracious.

@kate2357 .... I do understand!!!  I am confused most of the time.  I thought maybe you listed the lower case for letter... L  which is l.  All's well that ends well....on we go....

Columbia Restaurant 1905 salad


Salad Ingredients

½ head iceberg lettuce, shredded small
2 ripe tomatoes, cut in eighths
½ cup Swiss cheese, cut in julienne strips
½ cup ham, cut in julienne strips (or turkey or shrimp)
¼ cup green Spanish olives, pitted
2 teaspoons grated Romano cheese

Salad Dressing Ingredients

1/8 cup white wine vinegar
½ cup extra-virgin Spanish olive oil
4 garlic cloves, minced
1 teaspoon Worcestershire sauce
Salt and pepper to taste
1 teaspoon oregano
2 teaspoons lemon juice

Preparation

Toss together all salad ingredients in a bowl, except Romano Cheese.

Mix garlic, oregano, and Worcestershire sauce in a bowl. Beat until smooth with a wire whisk.

 

Add olive oil, gradually beating to form an emulsion.

 

Stir in vinegar and lemon juice and season with salt and pepper.

Add dressing to salad and toss well.

 

Add Romano Cheese and toss one more time.

 

Serves 4.

@Zhills ....Cute story about your daughter thinking L-M and N-O were each one letter!  I can see why too..😁.

3 Ingredient Orange Chicken (Orange Marmalade BBQ) - From Dinner Then Dessert

Ingredients
5 cups chicken nuggets , precooked
1/2 cup BBQ Sauce, (we used Sweet Baby Ray's)
1 cup sweet orange MARMALADE 
3 tablespoons soy sauce
2 teaspoons sesame oil , optional


Instructions
Cook the chicken nuggets according to the directions on bag.


Mix together the bbq sauce, orange marmalade, soy sauce and sesame oil in a microwave safe bowl and cover with a damp paper towel.


Microwave for 45 seconds.


Toss the hot, crispy, chicken nuggets with the orange bbq sauce

The Columbia on Longboat Key would make this salad at the table. It was delicious. They had a waiter that would make this odd chirping noise when he would walk through the restaurant going about his duties which really irritated my husband so much that the next time we wanted to go to the Columbia we drove up to Tampa. LOL

NACHO Dogs

 

1 cup crushed Doritos

1 package jumbo hot dogs, chopped

1/2 cup mild salsa

1 (10 3/4 oz) can Fiesta NACHO Cheese Soup

1/2 cup shredded cheddar cheese

 

Place Doritos in bottom of small baking dish.  Brown hot dogs in nonstick skillet over medium-high heat.  When browned, stir in salsa and soup.  Heat through.  Pour over the Doritos, then sprinkle with cheese.  Bake at 350 about 30 minutes.
