Easy Salsa

*easy to scale up or down

 

Ingredients:

3 cans stewed tomatoes 

5 slender green onions

1 large garlic clove

1/4 teaspoon salt

juice of a fresh lime, or from half a lemon

1/2 jalapeno, seeded & chopped - use a whole one for spicier salsa. Leave in the seeds if you like it even spicier.

half a bunch of cilantro, stems removed & roughly chopped (about 1/2 cup)

 

Directions:

1. Smash the garlic. Use the salt called for in the recipe to turn it into pulp.

2. Cut the green onions in half, separating white from green - thinly slice the green part. Roughly chop the white.

3. Drain liquid from 1 can of stewed tomatoes & place the drained contents into a food processor.

Add the white part of the onions, the garlic pulp, lime (or lemon) juice, & chopped jalapeno.

Pulse well.

4. Add the rest of the undrained stewed tomatoes, cilantro & the slivered green part of the onions. Pulse a few times, leaving a chunky mixture.

5. Taste & add more cilantro or salt, if necessary.

2 ingredient PESTO chicken - From Cafe Delites

Ingredients
4 skinless and boneless chicken breast fillets (about 1 kg | 2 pounds)
1/2 cup Basil PESTO, plus 1/4 cup extra for serving (use this recipe for homemade pesto or you can use store bought)
Salt and Pepper to season (optional - adjust to your tastes)
500 g | 17 ounces cherry tomatoes (optional as a serving idea)


Instructions
Smother chicken fillets in the pesto on all sides (about 2 tablespoons of pesto for each chicken breast, depending on your taste). Season with salt and pepper, if desired.


Grill:
Preheat a barbecue plate, grill pan or skillet over medium-high heat. Cook for 5-6 minutes each side or until completely cooked through. Transfer to a warm plate. Grill the tomatoes, rotating once, until soft and beginning to brown.
Top chicken with extra pesto. Serve with the tomatoes.


Oven Baked:
Preheat the oven to 350°F | 180°C. Line a baking dish with aluminium foil or bang | parchment paper.


Arrange the coated chicken breasts in the baking dish and bake in a preheated oven for 30 minutes.


At 30 minutes, remove the chicken from the oven and arrange the tomatoes around each fillet.


Place the chicken back in the oven and cook a further 20 minutes, or until the chicken is cooked through and no longer pink.

Quaker Famous Oatmeal Cookies

 
 
The original Quaker oats oatmeal cookies recipe is still the best! 
 
 

Ingredients

  • 3/4 cup Crisco shortening
  • 1 cup firmly packed brown sugar
  • 1/2 cup sugar
  • 1 egg
  • 1/4 cup water
  • 1 teaspoon vanilla extract
  • 1 cup all purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon baking soda
  • 3 cups uncooked Quaker Oats
 
 

Instructions

  • Heat the oven to 350°F.
  • Combine flour, salt and baking soda together in a large bowl. Set aside.
  • Cream Crisco shortening, both sugars, egg, water, and vanilla together until light and fluffy.
  • Stir dry mixture into the sugar mixture. Mix well.
  • Stir in oats.
  • Drop by teaspoon onto greased cokie sheets.
  • Bake at 350 for approximately 10-12 minutes. Do NOT over bake.
  • Let cool a few minutes on the cookie sheet before removing to a wire rack to cool completely.

This recipe can be tweaked so many ways. I like to add Kalamata olives and use Fontina cheese. Really good paired with soup and a nice crisp white wine.

 

 

Savory ROSEMARY Buttermilk Quick Bread Recipe - From On Sutton Place

Ingredients
2 cups all purpose flour
2 tablespoons Sugar
1 tablespoon Baking Powder
1 teaspoon salt
2-3 teaspoons garlic powder
3/4 cup fresh shredded parmesan cheese
1 cup buttermilk
1/4 cup canola oil
1 large Egg
1 heaping tablespoon fresh chopped ROSEMARY 


Instructions
Preheat oven to 350 degrees F.


In a large bowl, combine flour, sugar, baking powder, salt, garlic powder, and parmesan cheese. Whisk together and set aside.


In a smaller bowl, combine buttermilk, egg, and canola oil. Whisk briskly until fluffy.


Pour the buttermilk mixture into the bowl containing the flour/parmesan cheese mixture. Fold together with a spatula until the flour is completely mixed in.


Gently fold in the fresh rosemary. Batter will be very moist and shaggy.
Pour into a 1.5 quart loaf pan that has been sprayed well with non-stick spray. Sprinkle lightly with chopped rosemary.


Bake for 45 minutes. Loaf is done when a knife inserted in center comes out clean and outside is golden.


Cool for 10 minutes and remove loaf from pan. Slice and serve warm.


Notes
Sharp cheddar cheese may be substituted for the parmesan.
In addition to or instead of the rosemary: 1 teaspoon dried oregano, 1/2 cup chopped olives, 1/4 cup chopped onion, 1 tablespoon fresh chopped dill, 6 bacon strips (crispy and crumbled.)

Sheepherder's Breakfast

from Taste of Home

 

  • 3/4 pound bacon strips, finely chopped
  • 1 medium onion, chopped
  • 1 package (30 ounces) frozen shredded hash brown potatoes, thawed
  • 8 large eggs
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 cup shredded cheddar cheese

1. In a large skillet, cook bacon and onion over medium heat until bacon is crisp. Drain, reserving 1/4 cup drippings in pan.

2. Stir in hash browns. Cook, uncovered, over medium heat until bottom is golden brown, about 10 minutes. Turn potatoes. With the back of a spoon, make 8 evenly spaced wells in potato mixture. Break 1 egg into each well. Sprinkle with salt and pepper.

3. Cook, covered, on low until eggs are set and potatoes are tender, about 10 minutes. Sprinkle with cheese; let stand until cheese is melted.

Thai Peanut Noodles

Prep Time  2 mins     Cook Time  10 mins 

  • 1/4 cup smooth peanut butter
  • 1/4 cup low-sodium soy sauce
  • 1 teaspoon sesame oil
  • 2 tablespoons packed brown sugar or honey
  • 1/2 teaspoon chili paste - optional
  • 1 tablespoon rice vinegar or apple cider vinegar
  • garlic cloves minced
  • 1/4 teaspoon ground ginger
  • 3 tablespoons water
  • 8 oz. noodles **

    Instructions

  1. Cook noodles according to instructions on the package. Drain and keep warm.
  2. Whisk all ingredients for sauce in a small bowl or measuring cup. Make sure the sauce is smooth and the peanut butter mixed well with all ingredients. Taste and add more chili paste if needed.
  3. Heat up the sauce in a pan or in a microwave and pour over noodles. Toss to coat.
  4. Garnish noodles with chopped green onions and toasted sesame seeds. Serve.

Recipe Notes

You can add thinly sliced carrots, edamame beans or split peas, thinly sliced peppers and even cubed chicken to make this a one dish meal. 

Garnish the noodles with chopped green onions and toasted sesame seeds.

**  If you look at the Asian section of your grocery store, you will find several kinds of noodles. You can use any you like in this dish! If you don't want to buy special noodles or don't have time for a trip to the store, use spaghetti or fettuccine noodles. Ramen noodles from a soup packet work great too! Simply cook and toss with the sauce.

Chilled Garlic Sesame UDON Noodles with Vegetables  -From The Cozy Apron

Ingredients:

• 4 (7 ounce) packages fresh UDON noodles (from the soup package), soup seasoning discarded
• Salt
• Avocado oil
• 7 ounces shiitake mushrooms, sliced thinly
• Black pepper
• 6 cloves garlic, pressed through garlic press
• 1 medium-large baby bok choy, thinly sliced
• 1 red bell pepper, cored and seeded, and thinly sliced
• Green onion, sliced, for garnish
• Sesame seeds, for garnish
• Garlic-Sesame Dressing (recipe below)

 

Preparation:

-Place a medium-large pot of water over high heat, add in a few pinches of salt, and bring to a rapid boil; once boiling, add in the fresh udon noodles, and using chopsticks or the handle of your spoon, gently move them around to separate them, and cook for no longer than 3 minutes; drain and rinse under cold water thoroughly until the noodles are chilled.

 

-Place a large pan over high heat, and drizzle in a bit of the oil; once hot, add in the sliced mushrooms, along with a pinch of salt and pepper, and saute for a few minutes until softened and golden-brown; then, add in the garlic and stir to combine, sauteing just until aromatic; spoon onto a plate to cool for a few moments.

 

-Add the chilled noodles to a large bowl, and toss with the dressing; then, add in the sliced baby bok choy, red bell pepper, and cooled sautéed mushrooms. Toss gently to combine.

 

-Divide evenly among bowls, and garnish the tops with some green onions and a sprinkle of sesame seeds; serve cold.


Garlic Sesame Dressing Ingredients:

• 6 cloves garlic, pressed through garlic press
• 3 tablespoons soy sauce
• 2 tablespoons rice vinegar
• 2 tablespoons honey
• 1 ½ tablespoons chili-garlic sauce
• 1 tablespoon sesame seeds
• 1 tablespoon sesame oil
• 1 tablespoon avocado (or other) oil
• 1 teaspoon grated ginger
• 1 teaspoon chili oil (optional)
• Pinch red pepper flakes (optional)

 

Preparation:

-Add all ingredients to a jar with a top that you can close (a mason jar is perfect for this), and shake the dressing very well to completely combine all ingredients; use immediately, or keep cold in fridge.

This is a recipe from Ree Drummond/Pioneer Woman...pretty easy and you can add your own fruit choices.  

 

Fruit Tarts

 

1 roll refrigerated sugar cookie dough, cut into 18 slices

1 pkg. (8 ozs) cream cheese, softened 

1/4 cup confectioner's sugar

1 teaspoon VANILLA

3 kiwi, peeled and make 18 slices  (more if needed)

6 strawberries, hulled and make 18 slices (more if needed)

18 raspberries

36 blueberries

1/3 cup apple jelly

18 fresh mint leaves, optional

 

Put cookie dough slices on parchment-lined baking sheets and slightly flatten each one.  Bake according to the package instructions; set aside to cool.

 

Mix together the cream cheese, sugar and VANILLA until smooth.  Spread some onto each cooled cookie.  Arrange a kiwi slice, strawberry slice, raspberry and two blueberries on top of each.  Warm the apple jelly over low heat, 2-3 minutes.  Brush the fruit with apple jelly to glaze it.  Garnish each with fresh mint if desired.

 Bacon Cream Cheese Stuffed Wontons- From Call Me PMC

Ingredients
For wontons
1/2 cup bacon cooked and crumbled
8 ounce cream cheese softened
1 whole green onion sliced thin
1 tablespoon Sriracha sauce
1/2 cup water
24 WONTON  wrappers
vegetable oil for fryingSauce
2 tablespoon soy can use low sodium
3 tablespoon honey
1 teaspoon rice wine vinegar


Instructions
In a bowl, combine bacon, cream cheese, green onion, and Sriracha sauce. Mix well.


Add approximately, 1/2 tablespoon mixture in center of wonton wrapper.


Dip a brush or your finger in water and moisten edge of wonton. Press to seal.


Repeat until all wontons are filled.


Heat oil to medium-high.


Add a few at the time to the hot oil and fry 1 to 2 minutes per side until golden brown.


Drain on wire rack or paper towels.
Repeat until all wontons are fried.

 

Sauce
In a small bowl, whisk soy, honey and vinegar. Serve with wontons.
