I made this last night for dinner. I always make extra because the thighs are really good cold also.

2 pounds chicken thighs
1 cup low sodium soy sauce
1/2 cup white vinegar
1 T freshly ground black pepper or pepper corns
2 T brown sugar
5 garlic cloves, minced
3 bay leaves

Combine soy, vinegar, pepper, brown sugar, garlic and bay leaves in a large pot. Place chicken in pot skin side down. Bring to a boil. Immediately turn down to a simmer and cover pot.

After 30 minutes remove lid and turn chicken over. Simmer for an additional 20-30 minutes until done.

I serve with rice. Also I buy bone in thighs and take the skin off before I cook but that is up to you. Boneless thighs seem to absorb too much of the vinegar and soy.
