Just roasted a pan with Broccoli, Cauliflower and Carrots for the week.

 

Pickled some of the carrots!  Yum!

Tonight we are having baked chicken thighs, sweet potatoes, and asparagus.

OMG!!!!!😶it will be chicken this month and prob beyond---I order my groceries from amazon fresh and have them delivered --have done this for many years now-- and normally am very happy with it all---HOWEVER---sometimes they can mess up and I usually can get any faux pas corrected.Yesterday was one big boo-boo--I ordered 1 package of chicken filets--just one........and got 5 paks of huge chicken breasts----FIVE!!!!😬almost 11 lbs!!!! Was $37+ instead of $6. I have a small refer/freezer, how in the world do I freeze 11 lbs of anything in there. But after about an hour of online with the chat--got it figured out and was refunded for that even tho I wanted to pay for the one I ordered--CS refunded the whole $37. Today I am going to vacuum seal it all into portions sizes and use my Tetris abilities to figure out how to get er' done!!! and then find a multitude of recipes for chicken!!!Good grief!!!

We had leftovers this weekend.  Tonight I'm making baked BBQ chicken thighs, fries and applesauce.

I've done that!  Doesn't it make you feel (? Smiley Frustrated?) when you see YOU actually ordered that!

We’re heading out this morning for a long awaited trip to PA.  I’m showered and mostly packed.  I'm having my coffee before I get dressed and make myself presentable.  I'm not putting in an abundance of effort, though, since we’re driving straight to our first hotel and only stopping for gasoline and restroom visits.  We’re taking a packed lunch and will find a place to stop along the way.  We’re having roast beef lettuce wraps (add bell pepper slices, Kalamata olives, tomato, and avocado to mine), a string cheese, a hard cooked egg, celery sticks, a few nuts, and a No Sugar peanut butter cup.

Ordered corned beef, potatoes, cabbage and carrots from Wegmans to have for dinner tonight since it is St. Patrick's Day.  It is one of their gold pan dinners so we just have to pop the whole thing in the oven.  

 

Saturday DH and I went to the mall to make a return to Old Navy.  We ran into my BFF and her husband so we all went out to dinner at The Cheesecake Factory.  I had steak medallions with mushrooms, tomatoes, mashed potatoes and asparagus.  

 

Sunday DH made beef vegetable soup and Monday we had BBQ chicken, green beans and potato salad.

@Zhills --I check and recheck my orders before I push the order button----and I only ordered 1 --how the 5 got in there--is a mystery---plus---I ordered a different brand and got amazon fresh brand instead.
