Wow @Enufstuff Baked apples bring back good memories for me. My mom made them when I was very little.

@LuvSoCal  I probably only bake apples once a year. I like to bake a few things at the same time. I was already doing meatloaf

and baked potatoes, so I thought that I would use the Cortland apples that I have.

 

   They are so easy to do. I just core the apples and trim a little of the peel from the top. The apples are placed in a baking dish and

I fill them with brown sugar. Sprinkle some cinnamon on top of each one and top with a pat of butter.

 

   I put about a half inch of water in bottom of dish.

   Bake for about  one hour in a moderate oven 350 -375 degrees. I baste the apples a couple of times during baking,

with the liquid.  Serve warm with a little of the liquid.

 

     They smell so yummy baking.

Yesterday  I put a mesquite pork tenderloin in my crockpot, around 5P I then shredded it to roll up in mini yellow corn enchiladas. Stuffed them with the meat, green onions and taco cheese. drezzled a bit of salsa on each. covered with foil, popped in the oven to heat up. I mashed avocados with a spoonful of Duke's mayo, then cut up cukes and tomatoes on top as my side. 

 

DInner was very good, we really enjoy eating some rendition of Mexican food either at home or out. YUM!!!

@brandiwine   We love cabbage rolls but we don't have them very often at all. My mom made killer cabbage rolls. We need to do this this upcoming cold weather season - comfort food for sure.

@Meowingkitty   Tuesday I went to the grocery store specifically for some ground pork among a few other tings we couldn't get at Aldi's.

 

With the pork Tuesday for dinner, I made a quick and easy white chili - this is from 'allrecipes.com' and it is one of THE BEST chili recipes ever! We'll have leftovers of this tonight in fact for dinner.

DH and I are serving as staff for a SG concert event this evening.  The promoter always feeds the staff beforehand.  I had a little turkey breast, green beans, a teeny piece of sweet potato, and a tossed salad.  The dessert offerings are always loaded with sugar so I baked cookies this morning and brought a couple along for our dessert.
