Re: What's Cooking in October 2016?

Thought sure I had stopped by yesterday - I know I did but now I wonder where I posted or did it do a disappearing act as sometimes happens. Had ham leftovers for two more evenings and it is about gone now. That worked out fine. In fact last evening we had ham sandwiches - cannot go terribly wrong with that - fast and easy meal. Had a couple go withs, i.e. potato salad - like I said, that worked.

This morning have a MD appointment - never like those things but must go. Then need to get some missing items needed to continue to survive, i.e. bigger bag of black oil sunflower seeds for the birds. LOL. They need to eat also.

Then for dinner? May just fix some spaghetti - easy to fix and always good to eat. Hope one and all have a marvelous day - it is quite cold this morning but still suppose to get up to the 80s. Will work for me. Glad the heater is working now but am sure will have to turn it off in a few hours.

Made a bean quesadilla last night for dinner and also today for lunch.  It's getting a smidge cooler around these parts so I may be breaking out a chili recipe this weekend.  We'll see.

@Laura14  I havn't made chili in decades, but used to make a fabulous one with cubed pork, don't remember if there was also beef, so I need to dig that recipe up if I can remember what book, of the hundreds I have, it is in.  Growing up, I ate the canned with saltine crackers.  Once I got married and began to cook, everything was from scratch.  My Mother was a baker, not a savory cook, and I was determined to make better tasting food, lol.

My family never made chili.  We're Italian so if it didn't have pasta in it, it wasn't for us.  Smiley Happy

I've been on a bean kick ever since I have to watch my cholesterol so I've found new things like chili to make with it.  I do make mine with tomato sauce though so it's still Italian!

@Laura14  Growing up, practically my entire neioghborhood was Italian, so I learned a lot by watching my friend's Moms cook, and I cook mainly Italian today, but make up my pasta recipes.  I also cook Mexican and Asian food.

@mousiegirl  You are a gourmet and I still think the Food Network should give you a show or QVC at least a spot on ITKWD.  I can see you in cookbook corner now!  Smiley Happy

We always put spaghetti in our chili.  I think my mother did that to stretch it but that's the only way we make it.

@spix  Here it is.  This makes one regular size loaf,9 x 5, but is great for mini loaves.  A double recipe makes eighteen minis, so one should make nine, or if the loaf pans are a bit bigger than mini, less, but I am sure you can figure it out. Smiley Happy  I always add more nuts and raisins than called for.  Bake for 55-60 minutes, but I would check sooner, and mini loaves take only twenty-five minutes or less to bake.DSCF1511.JPG
