Lunch today:

Steak fajitas (used Egg Life egg white wraps instead of tortillas)

Pork skins w/guacamole & salsa

Chia Seed Pudding w/keto maple syrup

1  square from a Bake Believe SF Milk Chocolate Bar

 

Dinner:

Big salad with spring mix, romaine, cukes, mini peppers, grape tomatoes, Kalamata olives, hard boiled egg, and bleu cheese dressing

Will be making spaghetti and meatballs tonight. Also a salad,not sure if I will make garlic bread or not.

My husband and daughters ate Captain D's tonight.  

 

I made myself a hot and spicy soup from leftovers; grilled onions, chicken breast, ricearoni, serrano peppers, chicken broth, and garlic.  I liked it, and was happy to get rid of 3 bowls in the fridge.

Chicken breasts are thawed and cream cheese is softening for one of our favorites for lunch today, Chicken Florentine.  I'll make some green beans to go with it and we'll have our daily serving of chia seed pudding with some berries as our dessert. 

I want to go out for some groceries this afternoon, but it's super cold so I may put it off until the weekend.

Temps & wind chills below zero here. We will have tossed green salad, lasagna ,& garlic bread. There were some delicious strawberries at the store yesterday so I also got a pound cake & whipped cream. Perfect dessert to think Spring is coming! Stay warm & safe out there. Omicron is wild here.

We had company for lunch today.  I made my Chicken Bacon Broccoli Ranch Casserole concoction (did a double batch so I could send leftovers home with them), green beans, keto biscuits with butter and keto strawberry jam. So good.

I am making chicken soup with matzah balls & a roast beef with carrots, onions & potatoes. Will have green beans alongside. Actually, our weather has warmed up just a bit with no snow in the forecast. Just single digits overnight but in the 20's tomorrow & Sunday.

Anyone else finding grocery shopping a challenge as of late? Chicken & beef not in huge supply. Frozen veggies wiped out! Many canned goods gone but some still filled up. And the prices, both dairy & groceries up, up, up.

I had some ground beef to use up so I made some vegetable beef soup. It is simmering on the stove. Also have a loaf of good crusty bread to have with it.

Good evening everyone. My wife makes chicken and broccoli that's really good. Yours is different but yours sounds really good.  Ria puts broccoli cheddar soup and cheddar with mil with the broccoli . were expecting 18' to 24'inches of snow.  We had leftover lasagna rolls today and salad tonight. Im not s big salad fan but I discovered taco sauce and mayonnaise mixed is really good on salad for me. Hope everyone has a good weekend and everyone is safe with the snowstorm. Those of you that are getting the storm.
