What’s Cooking in January 2022?

Happy New Year Foodies!  @Pooky1  I want to assure you that I AM NOT taking over your monthly thread, but I wanted to tell what I've been up to today and the January thread hadn't been started yet.  So, just this once, OK?

Whew, what a day.  Our family's Christmas get together is tomorrow. We all pitch in to create a large spread of finger foods and keep everything casual.  I try to do more than our children because I remember what it was like being in their shoes and living in a recession.  In addition to a Christmas, we're going to celebrate our granddaughter's first birthday tomorrow too.  It's hard enough trying to coordinate gathering for holidays let alone a birthday party in just a few weeks too. 

This afternoon I made deviled eggs, two keto birthday cakes; chocolate with chocolate buttercream frosting & sprinkles,  and vanilla with pink cream cheese frosting & sprinkles, bacon wrapped cocktail sausages (will bake tomorrow), sliced cheeses and sausage for a charcuterie board.  I still have to make a dip, glazed pecans, and assemble jalapeño poppers (will bake tomorrow).  I'm in pretty good shape to finish and still get to bed at a decent time.  

Monday we de-Christmas!

Monthly thread? .....Have no idea about a monthly thread and I check this site daily.  Is it a particular person who starts a new month?

 

If there is a 'rule' of sorts - I'm not aware.  Either it doesn't catch my interest or my eyes are closed.

To me - it's come one..............come all.

 

You've done a pound of cooking - I would of ordered pizza!

Dinner was pepper steak and brown rice along with blackeyed peas and collard greens.  Pepper steak was you tube recipe from Nanaaba's Kitchen.  Delicious and we decided to add to rotation.  It will need to be a weekend meal because it takes some time. Nanaaba's kitchen is spotless and uncluttered.  Those could be goals.  Happy New Year!

@Pooky1 is the one who gets the conversation started each month.  We usually share our lunch and dinner menus, or any sort of cooking we're doing, but I don't see recipes in the thread since there's another forum for that.

 I picked up some flank steak the other day.  I'm probably going to use it for fajitas.  I have my menu planned for a couple of weeks so it'll be later in the month.

Started off 2022 with a large slow cooked pot of black eyed peas.  Threw in 4 ham hocks and let it cook for about 6 hours. Holy moley I could just stick my face in and inhale. I made homemade flour biscuits that were so fluffy they could have floated!

We will eat them for two days.

I fell asleep earlier than usual last night. Consequently, I woke up earlier than usual. So, I came downstairs and made a batch of spiced pecans and a cheesecake. 🤷‍♀️
