As far as russet potatoes they were dark brown skin, oblong and large.  Preferred for baking, but could be used any old way.

I am in NJ and was shopping this morning.  I saw bags of eastern all purpose potatoes.  They are round, not oblong.

New Potatoes are really small red potatoes harvested before they reach maturity.  If they are larger than that they are simply red potatoes--the waxy potatoes that were in stores before Yukon Gold (now sometimes "yellow" potatoes) came on the market.

 

Back in the day, Russets and Red potatoes and sweet potatoes/yams were all that was in the store.

My market usually calls them russets when they're bagged up.  When they're loose and sold by the pount, they're usually called baking potatoes.

I call them brown potatoes but I think my mom called them baking potatoes.

i call them Russet potato

i think of baking potato as a cooking method

but if they are in the store's cash register as baking potatoes the store manager probably can't override it.  that is probably done at the home office

was there a potato category with different subtitles like peppers have
