This is the first recipe I ever found on Allrecipes.com, about 10 years ago. We still enjoy it. So simple. (You can play around with it, too. I sometimes use pepperjack cheese, for more spicy flavor.)

An LA specialty!
Ingredients
2 Tbsp. olive oil
5 cloves garlic, minced
1 medium yellow onion, finely chopped
8 oz. ground chuck
1 (10-oz.) pkg frozen chopped spinach, thawed and squeezed dry in paper towels
8 eggs, lightly beaten
1⁄4 cup finely grated Parmesan
Crusty Italian bread, for serving
Kosher salt and freshly ground black pepper, to taste
Instructions
Heat oil in a 12" skillet over medium-high heat. Add garlic and onion; cook until soft, about 5 minutes. Add chuck; cook, stirring, until browned and all moisture evaporates, about 10 minutes. Add spinach; cook until heated through, about 2 minutes. Add eggs; cook until eggs are cooked and mixture is slightly dry, about 4 minutes. Season with salt and pepper; sprinkle with Parmesan. Serve with bread.
Easy to make half or double.

A frittata is another easy dish that can be started on the stove in an oven-proof nonstick fry pan until the edges of the egg mixture begin to to set (about 5 minutes) and then finished in the oven (400 degrees for about 10-12 minutes).
It's quick to put together if you keep a bag of chopped onions and bell peppers in your freezer and shredded cheese in the fridge. Other vegetables could include asparagus, broccoli, spinach, mushrooms or chopped tomato.
The leftover wedges heat up quickly in the microwave and taste good the next day, so I use 8 eggs when I make this for two people. Use your own judgment on the number of eggs and other ingredients to use. Recipes vary widely so your own taste matters most.
Check for recipes online. I don't have any one in particular to recommend. They all can be good.

Here's our favorite, also from allrecipes. NOT lo-cal due to the heavy cream, and I can usually do the sauce in the time it takes the water to boil for the pasta. Have substituted onion and garlic powder when I didn't have fresh, use diced tomatoes and omit the fresh parsley (add some dried to the sauce). Have also used italian sausage not in casings and omit oil (sausage browns well without it.) I also remove excess oil after browning (not clear in original recipe.)
Note: this is a very thin sauce, meant to have the pasta thrown in to absorb the sauce. I've been known to drain the juice from the tomatoes, stir in a bit of cornstarch to thicken the sauce and use it that way (BTW, it's wonderful in the original recipe; I'm not wild about people who substantially change the whole recipe and then rate the original, but sometimes I am in a hurry <grin> so added my tips).

Nobody mentioned a hot dog, either. One minute in the microwave, one minute to apply mustard and ketchup. Half a minute if you apply only one of those two.
