I don't have a gas range.  Is this a thing?  He is a professional chef.  It's an eggplant.

He's charring the eggplant over the flame; it is a method of actually roasting the whole vegetable.  Labor intensive but it tastes good.  I haven't done it with eggplants but do it with bell peppers all the time.  You have to keep turning the vegetable so it chars evenly.

You can do that with peppers also

I've never done that with any vegetables, but I've grilled a fast, tasty hotdog 🌭 this way before!  Yum!

 

If you ever decide to do this with a hotdog, I always stick a wooden skewer through one end, kinda like a makeshift campfire lol.

If you roast a hot dog, what do you do about grease dripping allover your stove?  Sounds like a big mess and potential fire hazard.

It just takes a few minutes if the flame is in high.  I just make sure to take off the burner plate first.  It really doesn't drip very much at all.  I'm using all beef hotdogs too.  I'm usually only making one for myself too.🌭😃

I've seen this done before with peppers on cooking shows. I have a glass top range so wouldn't work for me.

When we were kids we'd cook hot dogs and marshmallows over the gas burner.

 

When I cooked with gas, I used to roast egg plant over the gas to make Melanzane Grigliate...it's the only way I like egg plant.

I have a gas stove. I've heard of this but I don't think I would try it.  Smiley Wink

I don't have a gas stove so can't try it.  But on one of my FB cooking groups, someone roasts peppers in their air fryer.
