Very simple this Monday evening. Pulled pork and cole slaw on Hawaiian buns with a side salad.

Grilled T-bone steaks, baked potatoes & side salad. Homemade vanilla bean ice cream for dessert

I am going to attempt Chicken Marsala. We had a great dinner out the other night. We both loved it. This will be my first attempt so not expecting a 5 star review. All I need is the wine which I will pick up today. Wish me luck. I have pizza as a back up just in case.

Although it's not yet fall, nor is it really cool enough for soup, that's what I'm making for dinner tonight - chicken soup using the carcass from a rotisserie chicken from Costco. I add in some carrots, celery and onions, throw in a bouillon cube or two (at the end depending on taste) and we're good to go. Haven't decided if I'll use rice or a small pasta (Ditalini or Tubettini) for the starch, I'll see what I have in the pantry.

My kitchen is smelling wonderful.

Tonight is "breakfast" night! Breakfast sausage (hot), egg omelets and grits with cheese! I love breakfast for supper almost as much as having it for breakfast!!

Today is my DH's and my anniversary, but we aren't going out for dinner until Thursday. Tonight's dinner isn't anything fancy, but it'll be good anyway. Pulled pork and cole slaw for sure (the slaw is in the fridge and the pork shoulder is in the over as I type). I haven't decided what to make with it.

Loaded baked potatoes with fajita veggies and 2% cheese and sour cream. Husband is trying to eat less red meat and this is something he likes. Sherbet ice cream for dessert. Tomorrow night? tuna salad and watermelon chunks. And he'll have some ice cream when I'm not looking. (smile)
