@Harpa I was thinking I need to do another one!  I boned and butterflied the best one, stuffed with a light mix of herbs and garlic, mushrooms and a few bread crumbs as I remember, rolled and tied it and cooked it over wood or charcoal (don't remember!) and it was soooooooo good!  I'd do it in a hearbeat for you, and especially with and tea and muffins!

@Sooner  I cannot believe you wrote this!! I've had a love of horses & riding ever since a wee child, always begging my parents for a horse!! Sadly never owned one of my own. The closest I came to what I thought was heaven on earth was when my sister had 3 Belgians, a Quarter and a Morgan, and of course I was there all the time, shaking down the pears from the trees.

 

Another bond - you and I - and I so agree - then the day would be absolute perfection!!

@Harpa I was blessed enough to have them in a barn up the hill and a latch key kid home alone they were my buddies and fun to ride!  I don't know what I would have done without them the dog, cat, rabbit, turtles, parakeet (lived 9 years!) two pet chickens, and goldfish (Seymour lived 9 years).  No kids near, raised by wolves!  Woman LOL

It's not my most requested, but I make it alot for BBQ's

Potlucks.. 

Red Potato Salad

5 lb. bag small red potatoes, don't have to peel, cut in half

 

1 ounce pkg. Hidden Valley The Original Ranch dressing mix - 1 cup real mayo - 1 cup sour cream

 

1/2 lb. bacon or more to your liking recipe is very forgiving

sliced green topped onions - 1/2 cup shredded Colby Jack cheese, or more if you like. Mix dressing ingredients together & refrigerate for several hrs.

 

fry bacon until crisp, & cool on paper towels.

Mix dressing with potatoes, crumbled bacon

& other ingredients.

chill for several hrs. for the flavors to come together.
