If I'm really not in the mood to cook, if I have berries around, I'll make waffles or pancakes with berries. Grilled cheese and tomato is good. Hubby loves that.

I like to make a quick meal by tossing in a bowl leftover chicken breast cut up bite size, or Tyson crispy chicken strips, with frozen vegetables (whatever I have in the freezer), and leftover rice or pasta. Then I add a little soy sauce OR salad dressing OR tomato/spaghetti sauce, or a small bit of butter, or barbecue sauce, or sweet and sour sauce, whichever I am in the mood for and will work well with the 3 components of chicken, veg, and grain. Stick it in the microwave for 1 to 2 minutes, and I get a sort of healthy meal.

Sometimes , for lunch , I like to have cottage cheese with chunks of Pineapple or sliced peaches. If I have several fruits
and berries, I make a fruit plate and cottage cheese.
When my children were young and it was just too hot and humid
to cook and no one wanted anything heavy, I would make a huge
fruit salad with summer fruits and berries. Then I would top it
with scoops of rainbow sherbet or different flavors of sherbet.
The five children could just help themselves and thought that was a treat.
Sometimes I would make a big Chef's Salad with all the usual
salad vegetables. Then, I would top it with small strips of ham,
turkey and cheese.
Yesterday, I make a chick pea salad with chopped, tomatoes,
cucumber, red and yellow bell peppers. I added parsley, oregano, black pepper, lemon juice and tossed with red wine
vinegar and olive oil.

...speaking of chick peas...i saw aa suggestion, just for a change...to make a chicken salad but instead of chicken to use chickpeas. Mayo or no fat greek yogurt or combo, craisins or grape halves, celery, onion, walnuts and a can of drained chick peas. Im going to try it and add some dried thyme and majoram, salt & pepper like i do my regular chix salad.

A big salad with anything left in the fridge, ie, chicken shreds, deli meat, cheese, avocado, add dried cranberries and feta-
Or, a quick Mexican wrap meal with crumbled hamburger (add salsa), avocado, cheese, etc on tortillas-
