Definitely the Griddler, but remember it DOESN'T make "Belgian" waffles, that are deeper. However, if you want to save space, it's awesome and actually, the flatter waffles are fun because you can fold them like tacos and use them with ice cream. 

 

If you don't want to spend so much, Big Boss makes one that has the plates for waffles included, as well as five others including grill, donut, pancake, sandwich, omelet and you don't pay extra for the waffle plates.

I don't think it really matters what waffle iron you choose, it's just going to take a few practice runs to develop your style.   

 

Yesterday on the Food Network show, The Kitchen, the hosts used waffle irons to make some very common foods.   Sonny Anderson made cinnamon roll waffles from canned cinnamon rolls;  Marcella made a western omelet in her waffle iron, and Jeff Mauro made potato cakes in his waffle iron.   Everything was very simple and easy, with yet another way to use an appliance that spends too much time on a shelf unused.

I saw that episode of The Kitchen, and that is exactly what prompted my question.  I was really just wondering if I should get just a regular waffle iron, or the deeper Belgian waffle type to do those things.  It probably won't matter.  Thanks for your input!

@TeezNu..funny you say that- I have a waring Pro Belgian Waffle maker, (the kind that flips)  and I saw that episode yesterday as well , and thought "I should go out and buy a cheap one" for those items they tried..

 

PS My son is a waffle expert/snob and he has the Waring Pro as well, but I relaly think a cheapie little walmart waffle iron is all that s needed for the stuff I saw on the  that show...

I always use a little spray-even on the nonstick.  All thise little "nooks and cranies" created by the highs and lows, it's needed.
