Here's a list of the ingredients and description of the less familiar ones. Don't know why people think there's plastic in it because I don't think that's allowed in consumable food items, and I sure don't see it on this list.

Regular Velveeta cheese contains milk, water, milk fat, whey, whey protein concentrate and milk protein concentrate. These ingredients make up the bulk of the product. Enzymes and cheese culture are included to aid in the manufacture of the cheese -- these ingredients are bacterial agents that determine the taste, texture and appearance of cheese products. Velveeta cheese contains alginate, an emulsifier found naturally in brown algae. Sodium citrate adds a tart flavor in addition to acting as a preservative and acidity regulator. Sodium phosphate functions similarly to extend the product's shelf life. Two ingredients give Velveeta cheese its distinct hue -- annatto, a yellow-orange color additive derived from the tropical achiote trees, and apocarotenal, an orange color additive derived from citrus fruits.

I use it all the time and we like it.........makes good grilled cheese. If you don't like it don't use it. It has been around for years obviously people like it.

JESSA I usually make a white sauce I add sharp white cheddar cheese and velveta...and lately some pesto....PESTO MAC and CHEESE..Everyone loves it...I have taken large pans of it to Kids functions at the school and it always seems to be the first dish empty...but...that is pretty much the only place I use velveta....Tess

I personally don't care what Velveeta is.............I love it regardless! I like it by itself or melted and poured over something or in a casserole...........just love it! :-)

It is the only thing that works in my broccoli casserole (the ritz cracker on top recipe). I have tried "real" cheese and as it cools, it does not stay creamy. In fact, it gets kind of chewy. I will stick with my velveeta for the broccoli casserole, everyone loves it and requests it for holiday dinners.
