I kinda make it up as I go along! 

 

I have a molded mini bundt pan which I spray really well even the outside Rim (Baking Pam).

 

Ingredients

1 Lemon Supreme cake mix (Duncan Hines) or yellow cake mix (2 tsp. lemon extract) MIX as directed.

 

Filling: either lemon curd (homemade) or use Dr. Oeker Lemon Pie Filling (which I use) OR jello instant lemon pudding w/1 tsp lemon extract

 

Topping:  Cool whip, 1 small box lemon pudding, 1/2 cu. milk (add milk to thin until consistency is achieved)

 

 

Fill bundt pans 1/2 way (I use piping bag easier for control)

Bake 10-12 minutes at 350 degrees.  Check doneness w/cake tester.

 

Once cooled:  In piping bag - pipe lemon curd into small opening in cake

 

Put whipped topping mixture in piping bag with decorative tip - swirl ontop of cakes.  Put maraschino cherry on top.

 

I put in refrigerator - take out about 10 minutes before serving.

 

 

Note:  I like these mini-bundt cakes so I've also done this with chocolate, vanilla and other cakes - filling the center with whatever works.  Last time I did mini-black forest cakes - filling center with cherry pie filling.

 

I also "doctor" all cake yellow or white mixes replacing water for milk, add extract, add vanilla (2 tsp) and for chocolate cake same & add coffee (2 tsp).

Thank you, Home Decor!  I love the fact that you started with a cake mix.  Duncan Hines has always been my favorite, so I think I'll shoot for that one.  I may make my own lemon curd.  I made it years ago with a Cooking Light recipe, and it was delicious.  Now I have to find my mini Bundt pan as I haven't used it in awhile, LOL.

I order Dr. Oeker mix from A -- it's not box tasting it tastes better than my own😉.  I make a lot of different lemon desserts.  

 

I edited my reply as I add some extra things to enhance "box" mixes.  Although, Duncan Hines signature cake mixes are always tasty!,

I've never heard of Dr. Oeker products, but I'll check them out tonight at the A site.  I always love trying new products that others mention. Thanks again. 🙂

Thank you for taking the time to respond.  That's not the case here.  I haven't hosted our monthly Game Night since Feb. 2020 and we'll be moving out of the area in June. It's so sad to think those days are gone, but we had so much fun and so many laughs. I'll try to remember that, instead.

good luck with your move - things will get better!  

 

I need that 1x/week to keep my sanity!  As with all of us, 2020 hasn't been the best for all of us...

 

I'm thankful the ladies are conciencious of we are still in the pandemic mode and frankly, all my other friends have taken different paths and some have returned home to be with family, passed away or just won't leave the house -- 

 

I'm also thankful we have been vaccinated and perhaps we will continue to stay healthy -- if this is the case!
