There's a salad kit by Dole, it's called Southwest Mix (or something like that).  My family loves it.  Goes well with tacos and fajitas.  I used to serve rice (Spanish or Mexican) but not so much anymore.  At our all time favorite Mexican restaurant, they would serve this "slaw".  It was delicious!  I've never tried duplicating it but I need to.

A quick and easy sidedish is corn and either white or black beans mixed together and salsa added in.  I now make tacos with turkey meat.  I could eat one now!

I usually just make the tacos.

 

Maybe add to the tacos -

Finely chopped onion.

Finely chopped fresh cilantro.

 

And, serve with refried beans and guacamole.

Whole kernal corn, black beans well drained and chopped bell pepper (your favorite color) and maybe a little onion with a spicy oil and vinegar dressing! Corn and black bean salad!

@Foggy morning that sounds great.     I also use only ground turkey for my tacos.

 

I first thought they wouldn't taste the same but now I cannot tell the difference and I actually prefer them to tacos made with ground beef.

I guess for me it would be rice and refried beans.  But whenever I make tacos (for just me anyway - not guests), I don't make anything else.    Two tacos and I'm full for many hours.   

 

Sometimes I will just heat up a can of refried beans, add in some La Victoria (mild) taco sauce, and put a little of that in the bottom of the taco before the meat.     I like that.  But I have to plan it out where I can use up the whole can. 

 

I usually make up enough meat for 10 or 12 tacos and I just eat tacos for dinner for 5-6 days.  Smiley Happy    In fact, I've been craving them for weeks.  Gee, thanks!   Smiley Tongue
