This is exactly what I do. We like it with just a bit of melted butter and lots of shredded parmesan on top.
ETA The first week of November, when all of the Halloween stuff is on sale you can pick up those little serrated pumpkin carvers and scoopers. They usually come attached to a card and are dirt cheap. They work wonders for cutting ALL types of squash and are so safe compared to a knife.
