A super easy and yummy recipe is Cake Mix Apple Crisp. You can use fresh apples or pears or canned pie filling and is also great on pumpkin pie. Perfect for a cold snowy/rainy day.
Pre-Heat oven to 350 degrees
Just peel, core and slice thinly 4 or 5 apple or pears or ??
Place in a 9 inch pan, sprinkle with 1 box of dry cake mix (my favorite go to is Butter Recipe Golden cake mix). You can sprinkle a little cinnamon sugar (1 teaspoon cinnamon & 2 Tablespoons sugar) on top (or make a blend of cinnamon, clove and nutmeg with white or brown sugar). You can also sprinkle on some chopped, lightly toasted walnuts or pecans at this point. Drizzle with 1/4 cup of melted butter and bake at 350 degrees for 30 minutes or until golden brown. Enjoy while warm.

2 cups diced apples
1 cup sugar
1/4 c oil
1 egg
1 t baking powder
1 t cinnamon
1/4 t salt
1 t vanilla
1 c flour
1/2 c chopped nuts
In a bowl put the apples, sugar and stir, then add the oil, egg, baking powder, cinnamon, salt, vanilla, flour and nuts. Stir, batter will be stiff. Pour into a greased and floured 8 or 9 inch pan. Bake at 350* for 45 minutes. Take out of the oven and let cool.
* I used 2 Gala apples, what I had in the house and I didn't have any nuts. I left the peeling on the apples. Cake turned out great!!!

I'm jealous! It's cold up here where I am, but no now at all. ![]()

I'm betting you had a lovely, cozy day. I'd love to know what you girls finally decided to do with those apples.

We went with an apple crisp with oatmeal added to the topping. It was delish and really did hit the spot even without the ice cream. There is just something so heartwarming being with those you love, cooking together and watching movies that you both enjoy. Ended up being a wonderful day with lots of new memories to add to those we already have.
