soft shells, either flour or corn. "steamed" in the tortilla cooker.

saw a interesting thing on one of the cooking shows the other day, they used small taco seasoned cauli florets in place of the meat.  i could embrace that.

NEED either guac or sour cream, cheddar. like refried beans, or meat replacement, such as tvp.  pass on the tomatoes, but a nice salsa is good. preferably green.

@QVCkitty1 We're doing tacos too!  DH makes the salsa since he spent several years going to San Antonio and being on River Walk for his first computer position with 3M.

He loves the hard stand up tocos.  I prefer Tostotos and make a toco salad with quite a bit of lettuce, and a little sour cream.

I prefer soft tortilla shells, but the traditional corn shells are good too!

Favorite fixings:

salsa

shredded cheese (any type will do)

tomatoes

cilantro

avocados

a dash of red Tabasco

and perhaps a margarita on the rocks!   Smiley LOL

I love just about every taco on the planet, but lately, my favorite thing is to prepare ground beef with taco seasoning and shred cheese as if I were going to make tacos—and then turn them into a grilled cheese sandwich (with salsa or guacamole for dipping when I've got the ingredients on hand). Mmmmm...

When I first met DH 40 years ago, he insisted I mix a can of refried beans into the seasoned taco meat.  I've been doing it that way ever since.  We do hard shell tacos with lettuce, cheese, tomatoes, and black olives.  Sour cream and quacamole are options for me if they happen to be on hand.  I also use this seasoned meat-bean mixture to make nachos.  The bed is Tostitos Cantina Chips, regular, not thin.  Spread the meat-bean mixture on each individually  (don't use broken shells) or just pile on if in a hurry.  Scatter with chopped tomatoes, diced onion, shredded cheese and black olive slices.  Heat at 375 until hot and cheese melts. Serve with medium and hot taco sauce.
