@foxywoods wrote:@amyb Have you tried using a package or 2 of mozzarella slices? I find one 8 ozpckg will work when I male eggplant parm. I just cut it into thin strips. I do that with flatbread pizzas i Make sometimes because we have no decent take-out pizza in my area. You could usue 2 pkgs for more cheesey lasagna
I like to use the real deal mozz but its so soft. Maybe try freezing first?
I avoid buying shredded cheeses. The cellulose is off-putting and they add Natamycin to stave off mold development. I get bad gut reaction from the natamycin.
That's an idea, but only "sliced mozzarella" I recall ever buying, for like an anti-pasta type plate, or like for Caprese salads in summer...but that also is fresh and soft consistancy.
I agree with you on all the additives in the shredded cheese. Except for the Christmas Lasagna, I've stopped keeping it in the house and using it on other things, like I used to.
I'll check into alternatives. Tks for the input and ideas!

Google says: "Yes you can shred your own mozzarella for lasagna; it tastes better, melts better (no anti-caking agents!) and saves money, w/ tips like chilling the cheese in the freezer for 15-30 mins or using a food prrocessor making it super easy to grate. While pre[shredded is convenient, grating blocks of low-moisture or fresh mozzarella yourself yields superior flavor & texture for that perfect cheesy pull."
I think I will try this, this year. Not to waste it, I may just put some of the bag I haven't opened yet, so it doesn't go to waste. But will mix in and mostly use the fresh.

@JeanLouiseFinch. The expiration date on the affected cheese was March 2025. Isn't it nice they've advised us in December? Unless in a freezer, itv has most certainly already been consumed.

@JeanLouiseFinch. I've heard umpteen TV news reports on this recall and it was always mentioned.

Actually, the sell-by dates for the affected shredded cheese are between January and March 2026. The recall was initiated in October and formally posted in December. Here's a Consumer Reports article with further details:
