Wow, pretty comprehensive list...thanks for posting @JeanLouiseFinch.
A few wks ago I bought a bag of Sargento, which I don't see on the list, but don't know if I should feel skeptical on any shredded bagged mozzarella. I was going to use it in my upcoming holiday lasagna. I also didn't seen CT, my state on there.
I suppose I could use fresh or learn how to shred from fresh myself...hm.
I'm not too worried since Sargento and CT aren't on the list, but it does make one think twice.

You're probably safe then, @amyb. I usually shred my own. It doesn't have the cellulose and it melts better than prepackaged. I bought a manual grater from HSN a couple of years ago, or so, and it works great for me - more convenient than pulling out the big food processor. I ended up gifting the same one to several people and they all love it too.

I'm interested in that manual shredder...if you have an item#, otherwise I'll just check around HSN or elsewhere. I can't picture putting the soft fresh mozz in a shredder, but I'm assuming that's what you buy just a block or roll of the fresh mozz? I know it's better because you don't have the additives and it does melt better. Tks for info.

I had to check mine from Aldi. Luckily my UPC code didn't match.

You're correct, @amyb, the buffalo style of soft mozzarella would not work. It would create quite a mess. Firmer kinds of cheese are what you need. It's also a great appliance for grating nuts and making
pretzel/cookie/cracker crumbs lickitysplit.

Thanks so much for posting the item @JeanLouiseFinch It looks like a nice one.
I have a small condo kitchen and space is pretty full, so I have to keep gadgets to a minimum.
I have an old timey manual cheese grater like this, I seldom use, (so if anything, this could replace that) a tiny chopper, a small Cuisinart food processor, and two handheld graters, box type, and plane, I use for regular parmesan grating from a block.
My main thought here was how anyone could shred mozzerella as I only know the soft type that comes whole. I guess you'd just break it up into the lasagna. I feel it's less stringy too, which is kind of what everyone likes in this. I'll do some YT'g for ideas or just resort to my Sargento. I'll tell you this...once the task is at hand....quick, easy will be my desire! It's quite the process in my small kitchen.
Still going to check out the HSN one, though right now I don't have one place to store it! Lol. I thought this out after asking you about it, and seeing it would need some space to store. Tks again!

@amyb Have you tried using a package or 2 of mozzarella slices? I find one 8 ozpckg will work when I male eggplant parm. I just cut it into thin strips. I do that with flatbread pizzas i Make sometimes because we have no decent take-out pizza in my area. You could usue 2 pkgs for more cheesey lasagna
I like to use the real deal mozz but its so soft. Maybe try freezing first?
I avoid buying shredded cheeses. The cellulose is off-putting and they add Natamycin to stave off mold development. I get bad gut reaction from the natamycin.
