@ScrapHappy The only difference to me besides the lip is the quality and I use Nordic Ware.  Made in the US, they don't "thunder" or buckle in the oven and can be found on Amazon.  Also on Amazon is the quarter sheet, 1/2 sheet, whatever size you need of stainless steel racks to be placed inside the pan if needed.

I do a lot of sheet pan dinners and these are my go to pans.  I line with heavy duty foil for easy clean up.

@ScrapHappy - I use the same baking sheets for everything that I'd put in the oven; if I'm baking sugary items, I might still add parchment paper or a silicone mat even if there's a nonstick coating just to make absolutely sure the items will come out as desired.

Especially if you're planning to do sheet pan suppers, I highly recommend this set of pans from the Blue Jean Chef:

The pan doesnt matter to me.  I do sheet pan meals in a 13x9 baker for 2-3 people, and on a larger baking sheet/cookie pan for 5-6 people.  My pans are heavy duty and do not buckle in the oven.

If you need a roasting pan, my roasting pan is very close to this one from Pampered Chef.

I got mine with non stick coating from Belk about 6 years ago before the Belk brothers sold and they had a good store.

I don't think it matters whether they are used for baking or cooking.
